Good Old Fashioned Pancakes

This recipes IS MY GO TO PANCAKE recipe! This is how pancakes should taste! I always panic when I lose my print out and forget which recipe site carries this recipe! If you don't have a "go to" & "from Scratch" recipe for pancakes I promise you, this is the ONE! My kids love it and I think the Melted Butter and Tablespoon of sugar really gives it that yummy HOMEY flavor! My husband loves this plain and left overs are great as a snack in a bag!

Best Big, Fat, Chewy Chocolate Chip Cookie

I like crispy outside, soft inside. So these were okay. Huge cookies using 1/4 cup scoop which made them beautiful. All right. Little too sweet for me. I think non melted butter makes a huge difference to texture.

Fresh Pumpkin Pie

This recipe helped me through my first, from scratch pumpkin pie! The Cinderella pumpkin I had, had to cook for quite a bit longer, perhaps because of it's massive size. The balance of all the spices added in this recipe along with that fresh baked pumpkin, it was worth it! I kept seeing those cans on sale around T'giving thinking, "Hmm...should I grab those just to be safe?" I didn't to force myself to use my uncut Halloween pumpkin. Even though by the time I was to puree my pumpkin, my Cuisinart mixer of 12 years finally decided to die, (had to run out with just 15 min to spare-Thanks to Sur La Table for staying open till 9pm night before T'giving!) had to buy a new processor. I made two pies and everyone just, "Mmmmmed!" and "Ahhhhed" over this pie! I have to agree. It was out of this world, hands down best pumpkin pie I have ever had! Worth all the effort. Next year, I know I won't have electronic issues and my confidence in baking the pumpkin is there, that this will be a cinch next time! Definitely give this one a WHIRL!

Chicken Pot Pie IX

My 1st time making a pot pie and what a hit! I did the suggestion of boiling the veg in the stock. Saved a step, no draining, just into the onions, butter & flour. I didn't find celery seed so I tried a little caraway and it was interesting in another dimension but maybe just this one time. Peas-frozen went in last. I had all kinds of left over chicken breasts that I cubed and added very last to the mixture. I had taken out whole foods frozen pie dough about 5 days ago wondering what I would make and this was it! Stuff I had in the fridge. I was the winner, winner with this chicken dinner! I did the egg white wash as well and it was perfectly brown but I have an electric oven and cooked it at 375 for 49 minutes for that perfect golden brown. Easy as pie! I get it now! :)
