Surimi, Spinach, and Roasted Red Pepper Quiche

Mega hit in my house this morning. I didnt change much, just what I had too because of what I had on hand. I used fat free milk, and added a few different kinds of cheese, then used a red onion. Very good recipe, thanks for sharing. Even the kids ate it!!

Chocolate Chip Zucchini Bread

Very much enjoyed, I did as others suggested and used half oil/applesauce, used 1 and 1/2 C sugar, and extra cocoa powder. thanks for sharing, this kicks it up a notch when you get tired of plain zucchini bread. :)

Cheesy Zucchini Casserole I

Awesome, great way to add zucchini to your menu. We ate it as a meal instead of a side, so I added some imitation crab meat that I diced up, 3 different types of cheese I had on hand, celery, onion, and a few dashes of Old Bay. Served it with hot rolls, and it was all gone but one little piece - that I have to add was even better after sitting in the fridge overnight! Thanks for the recipe!!

Outrageous Chocolate Chip Cookies

The only thing I changed was I used butter flavored Crisco and all white sugar......(because thats what I had on hand......awesome cookie. Love it!! Great texture; very soft and chewy.

Grandma's Peanut Butter Fudge

Love it! Made it just as stated except for used creamy peanut butter, because it was what I had on hand. I didnt have a thermometer and failed at the soft ball test........ So, I did what others suggested, it took about 5 mins to get to a roaring boil, then I boiled for 11 mins, stirring almost continuously. It is perfect! Its soft and creamy, I put it in the fridge to set up quicker and make a cleaner cut. Will use it again, thanks for sharing your recipe!!

Banana Coffee Cake

Delicious! I did add an extra egg because I thought the batter was a bit thick while I was doing my mixing, and I didn't have cake flour so I used all purpose. I didn't make the topping because I was simply in the mood for cream cheese frosting, so I put cream cheese frosting on top and then sprinkled with some "Tastefully Simple, Caramel cinnamon sprinkles" that I had on hand! Its a winner. Thanks for sharing your recipe!

Peach Cake II

AWESOME! I have a peach tree outside, doesnt do too great, but hate to waste what it does give us, so searched here for a recipe to use them up. This recipe is terrific, I did take the other raters advice and cut the oil to 1/2 cup + 1/2 OJ (no pulp,) and I cut the sugar to 1 1/4 cup, I always add a tsp of almond flavoring to my cakes and muffins........Thanks for sharing your cake, A+++++

Melt In Your Mouth Blueberry Cake

Loved it!! Was easy to make, a nice breakfast or brunch cake, not too sweet, moist, and the little crust that forms on top is great, its very pretty to serve. I will say I did change only two things after reading the other reviews - I added an extra ripe banana to the batter (only because I had one to get rid of.) I also added a teaspoon of almond extract, which I add to almost all of my cakes, breads, and muffins. I had some leftover cream cheese frosting from another recipe, and we put a dab of that on top once it hit the plate. We LOVED it. Thanks so much for sharing. Will add this to my box and surely make it again!

Peanut Butter Fudge III

Great flavored fudge - quite tasty. However, I cooked it for 8 minutes instead of 10 and still, it did get a little crumbly. Next time I make it, Ill cook for 7 mins. As I said, it does have great flavor, we still ate every last piece.

Creamy Chocolate Frosting

THE BEST. I was a little afraid, I am used to using a recipe that I have to make on the stove-top. I must say that I will do this from now on, it was wonderful. Creamy and just melted in our mouths. I did use almond extract instead, i was out of vanilla. I just cant say enough, so good!! thanks for sharing it.
