Mahi Mahi with Coconut Rice and Mango Salsa

This was so yummy! Instead of mahi mahi we used tilapia. The rice turned out well and I loved the mango salsa! This recipe is a keeper for sure.

Hawaiian Fish with Pineapple

We made this with only 1/2 cup fresh lemon juice and instead of the basil and thyme we used caribbean jerk seasoning. It was wonderful served with rice. Healthy summer meal!

Best-Ever Cornbread-Sausage Stuffing

I made this for my husband's Thanksgiving dinner at work. It was very good and my husband said this is the best stuffing he has ever had. He also received a lot of compliments from his co-workers. We will definately repeat this recipe on Thanksgiving!
