Slow Cooker Scalloped Potatoes with Chicken

I made it just like the recipe except I didn't have cheese whiz so i used cheddar cheese. Not creamy at all and it might have been the generic soup i used but I did not care for it.

St. Patrick's Colcannon

I've never had colcannon before but it tastes yummy to me. I used bacon instead of cornbeef (didn't have any) and cooked the onions and garlic in the bacon grease along with the butter.

Amish Breakfast Casserole

SUPER YUMMY!! Made once per recipe and it was great. Then made "southwest" one with sausage instead of bacon, pepper jack for the swiss and threw in a green pepper with the onion. Both were excellent.

Easy Pina Colada French Toast

Fun! I added some pineapple juice and creme de coconut to the egg mix. I also made a "syrup" with the left over pineapple juice, coconut cream with some cinnamon, nutmeg and a splash of lime that I boiled until thick (ended up using a little corn starch to make it real thick like a glaze).

Slow Cooker Chicken Chili with Greens and Beans

Pretty yummy and a great way to use kale! I used "rotel" tomatoes instead of plain diced, fresh kale instead of frozen, threw in some garlic with the onion, no cream and whatever chili-type seasonings I had laying around (cumin, paprika etc). Came out great. But noticed the kale ended up soaking up the flavors more than anything else (kale was pretty spicy, while broth and beans mild).

Weeknight Wonton Soup

Very good. Threw in some garlic, ginger and lemon grass to the broth. And a single person udon soup mix/noodles I had in the closet. Everyone loved it and it took just a few minutes to whip up!

Baked Chicken with Peaches

Very fun! I had fresh white peaches and the only thing different is I sprinkled a little red wine vinegar and a touch of cinnamon. I think if you added some raisins it would have a moroccan flavor. Served with mashed potatoes which I thought was going to be odd but it went nice together.

Serbian Ground Beef, Veggie, and Potato Bake

I added an extra cubed potato to the beef mixture. I wasn't sure about it at first bite, but after a couple more it's addicting! My sister thought it was one of the best things I've made off the site!

Garlic Cheddar Chicken

Very yummy!! I used panko bread crumbs and just drizzled a little olive oil on the chicken instead of the rest of the butter. Then used the remainder of the garlic butter to toss on some red potatoes as a side. Very nice.

Quinoa Broccoli Casserole

Very yummy!! I might have cooked the quinoa a bit less next time because I like it a bit more 'poppy' or crunchy, but I enjoyed it much better than regular rice and I am a big fan of rice.

Dupre Family Chicken and Sausage Gumbo

I cheated and used boneless chicken breasts and premade roux (about 8oz). I was worried the breast might come out dry but they were super moist and easy to shred, I used andouille sausage (of course) and threw in a bay leaf, thyme, basil and some minced garlic when I threw in the sausage because I love SPICES!

pretty good stuff. I made half with rum and half without for my "green" new years party. Both were gone before midnight! I think the rum really added something to it. It's a bit sweet for drinking all the time, but great for parties!

Peach-Basil Sangria

Very yummy! I threw a little infused vodka (peach & clove) in with the peach/basil nector and let some cut up peaches soak in it for awhile before I added the wine. (Since I only had sweeter white wine I cut down on the sugar a bit).

Slow Cooker Pernil Pork
