Classic Waffles

Good basic recipe. Light and fluffy but could of had a bit more flavor. I will probably add a bit more vanilla and sugar next time.

Salsa II

I made this salsa because jar salsa is hard to find in Costa Rica and I needed it for an enchilada recipe I was trying. I was really surprised how well this came out even though I made a few changes. Besides scaling it down to 8 servings, the changes I made were the addition of minced garlic, no cayenne because I did not have any and I did not cook it….I just used it uncooked. It was so good that this will now be my “go to” recipe when I need a salsa for chips or cooking! Thank you so much for sharing!

Baked Ziti I

I tried this recipe thinking that it was going to be like other Baked Ziti recipes but was surprised to find that it wasn't like the other recipes at all. It is excellent and reminded me of lasagna.. just with different noodles. The fact that it called for sour cream instead of cottage or ricotta cheese was an added plus. We live in Costa Rica and cow cheese is VERY expensive here so being able to use sour cream is a money saver for us! Hubby said I can make this anytime! He loved it even more than I did!

Christmas Breakfast Sausage Casserole

I've made this recipe a couple of times now and have always been very pleased with the results. I even made a double batch for work. I work with 13 (male) engineers and they all loved it! Their comment: "You can bring that anytime you want!" If you can make 13 engineers happy, you've certainly got a winning recipe!

BLT Pasta Salad

Loved it! Great flavor and salad stayed nice and creamy even after refrigeration. I add frozen peas just to give it a little extra something and used real bacon bits instead of frying up my own bacon and it tasted just fine. Definitely a keeper that I will make again!

Fresh Southern Peach Cobbler

Not bad but not a fan of the biscuit topping. Still prefer crisp topping but thought I'd give this try anyway. It did have wonderful flavor though, but was a bit runny. If I make this again I will add more cornstarch to thicken it up a bit more.

Italian Chicken Sausage Risotto

This was Awesome! I have never had (or made) Risotto before.. but this sounded so good that I thought I'd try it. I'm glad I did! It came out perfect (Chef Ramsey would be proud!) I really was expecting something bland (after all it IS rice) but this actually had a lot of flavor and I was surprised at how good it tasted. I paired it with some fresh baked warm bread and butter and we had it for dinner. My husband loved it too. I WILL be making it again!

Sour Cream Pork Chops

I liked this but thought the lemon juice was just a bit overpowering. I will probably make it again but cut the lemon juice in half. And yes! It is good on corn on the cob!

Easy Italian Chicken II

I was excited to make this because of all the excellent reviews it received but was disappointed in the end. I marinated it for 3 hrs but it was too bland for our liking. On the plus side, it was very moist. (I cooked it in the marinate) I probably would not make this again.,

Tomato Basil Pasta

It was ok but not something I would make again. I chose to use it as a cold side dish and thought it was bland and a bit on the dry side. The only real flavor was the feta but nothing on the pasta.
