Easy Chicken Satay

My family enjoyed this as a Christmas night meal. I am so happy to have another chicken recipe that works for us. Thanks!! I wonder if I could make this up ahead of time (marinade and chunks of chicken together), then store uncooked in the freezer? Ever try that? I have a busy semester coming up, so while on xmas break I need to make up a bunch of freezer meals.

Scented Applesauce-Cinnamon Ornaments

Just did this. So easy (for me). My kids pretty much just had pick out the ornament shape they'll later get to decorate....I didn't have the time to really let them help as I have finals week coming up. Boo hoo. I placed just a bit of dough at a time between wax paper, just enough to make one ornament. I patted the dough to about 1/3". Lift the top layer of wax paper, then push the ornament-shape into the dough. Scrape the excess from around the ornament-shape, slide hand under the bottom wax paper and gently flip ornament into other hand. Lay onto cookie sheet lined with parchment paper. I used parchment paper on cookie sheet in case I have a hot oven and want to pop them in there for a bit to dry faster.

Mexican Shrimp Cocktail

Loved it. I made it exactly as written. I ate it as a soup practically as I thought the nearby chips & crackers detracted from it's awesomeness. I made it for a 2013 Super Bowl party. I'll for sure make it again for Super Bowl 2014.

Homemade Shake and Bake Mixture

The family liked this. Great home-made copy cat recipe. I made a whole batch and mixed it all in my food processor. (I make my own bread crumbs from left over ends and such.) I omitted the vegetable oil completely. Didn't have celery salt, so used a little celery seed. I cut up two whole chicken breasts into pieces roughly 4" x 2" and just rolled the pieces in the mix. The mix stuck to the chicken juices. I ended up using about 1/2 the mix, so I am freezing the left-over crumb mix; I never contaminated it since I expected extra. I baked at 400 deg F for about 20-30 minutes. The bottom of the chicken pieces were soggy, so next time I'll elevate them on a rack or use a broiler pan so hopefully the bottom crumbs will crisp up.

Quinoa and Black Beans

Loved it! I had never used quinoa before. It reminds me of a bigger couscous texture. I omitted the oil and sauteed the onion/garlic in white wine. I used my rice cooker and put everything but the veggies & beans into that. Once the cooked seasoned quinoa was ready, I added it to my veggies (sauteed onion/garlic and rinsed corn and rinsed beans), and cilantro. The cooked seasoned quinoa was even good without any veggies or beans!

Uncle Wynn's Bread Machine Rye

My family liked this a lot. I'm making another loaf right now. It's great toasted with butter! This is a recipe I'll make many more times. The first time I made it, I was afraid the kids wouldn't like it. I was watching them (6 & 8) to see how they would like it, and they ate it up saying 'mmm'. It was not a super strong flavor...it was just right for us. I made it just as stated (perhaps added an extra 1/2 T honey) and it turned out wonderful. I used Hodgson Mill Rye flour.

Beef Bulgogi

Incredible. Now my family's favorite meal...and we're about as far from Korean as you can get (Iowans). I had spent a summer in S. Korea back in 1995 and loved the beef bulgogi at restaurants. I don't know what took me so long to look up the recipe! I recently got a food processor and the slice attachment perfectly sliced my semi-frozen meat (I used some t-bones from the freezer -- sliced sans the bone/fat of course). This food processor took the work out of making the dish! If you have a bunch of steaks in your freezer -- because your parents raise beef cattle like me -- it's a delicious way to free up some space!

Potato Minestrone

I have a picky family but hoped this would work. Unfortunately, it didn't. I thought it was ok, but not my favorite. I even added ham after an initial taste. But kudos for being SO healthy!

Tacos in Pasta Shells

We love this. If you like tacos and pasta, it's a perfect match. I usually substitute taco seasoning for the spices in the meat. I have batches of taco meat premade/frozen...so it's quick to defrost premade taco meat, then nuke the cream cheese. I don't use 1 c of taco sauce either, I just squirt some on the shells and follow the rest of the recipe. I like to serve them topped with shredded lettuce and salsa.
