About this Cook
I am a wife, mother, grandmother. Almost everyone in our family is a "foodie" and love trying new recipes and foods. We used to have a bar and restaurant and have become a bit burned out on cooking so prefer uncomplicated recipes that are REALLY good. I have returned to using a crockpot and I love my bread machine. What timesavers! Recipes are often adjusted since my husband and one son are diabetics. I lead an afterschool cooking class in February of each year so also like simple recipes that kids can cook.

Creamed Chipped Beef On Toast
You will have more flavor if you tear up the beef into large bite size pieces, saute in the butter for a bit and then add the flour and milk.

Acorn Squash
I do something similar except I leave squash whole, cut off the cap at the pointed end, seed it, add honey, brown sugar, cinnamon and butter. Put cap back on, place in baking pan with a little water and bake.

Hot and Tangy Broccoli Beef
I also added more garlic, ginger and red pepper flakes. I used rice vinegar; since it is milder I might add a tsp or two more next time. Served it with rice made Asian style--no salt, so next time instead of water I will use a cup of beef broth to give it a flavor boost.
