Scallops with Red Pepper Sauce

Delicious !!! Followed other user's advice and added some extra veggies -- asparagus, mushrooms and extra red peppers. Delicious!!! And simple to make. Will definitely make again. Also, used bay scallops and left them whole.

Maple Salmon

Delicious! Only change I made was to use garlic powder instead of garlic salt since I used regular (not low-sodium) soy sauce, which is already super salty. Salmon was awesome!! I took some other people's advice and poured the marinade into a sauce pan, added a little cornstarch and poured it over the salmon.

Light and Fluffy Spinach Quiche

After reading several reviews, I made the following changes to the recipe. I used fresh spinach (the salad bag b/c I had it leftover), and sauteed it with the onions and garlic. Also used leftover sauteed veggies that I had from making fajitas (onions, red/green peppers, mushrooms, corn) Didn't saute the leftover veggies -- just added them into the pie crust. Also used a combination of feta and chedder cheese, and two extra eggs (most people suggested adding one extra, but b/c I made two quiches with this recipe, I used 6 eggs. I also added a little extra milk and only used 1/3 cup of olive oil mayonnaise. It was DELICIOUS! I will definitely make this recipe again.

Grandma's Slow Cooker Vegetarian Chili

Made this for my hubby who said he wouldn't call this recipe chili, but he did think it was tasty! My only modifications were as follows: I added an extra can of tomatoes (fire roasted), 5 chopped jalapenos, I sauted the onions, celery and green pepper prior to adding it to the crock pot (not a big fan of crunchy celery in food) and then I cooked on low all day. Served with shredded cheese on top and a side of corn bread. Will definitely make again.

Hash Brown Casserole II

I love this recipe and make it often. I only used 1/4 of butter, which was fine and I skipped the corn flake topping (only because I never have corn flakes around). I've had it with and without the corn flakes and both are very good. Seems to need a little more cooking than 45 minutes - maybe an extra 10-15 minutes.

Easy Four Cheese Lasagna

This was delicious and super easy. Even my picky kids liked it. I did add extra sauce and an egg, and I did not cook the noodles before putting it all together. I also used ricotta instead of cottage cheese. Since you're not adding spices, a lot of the flavor comes from the sauce so pick a good one! Love the four cheese combination.

Belle and Chron's Spinach and Mushroom Quiche

This was delicious! I didn't have any mushrooms, so I only used spinach. I don't eat meat, so I left out the bacon. I should have read the other reviews prior to making because the recipe makes too much for a deep dish crust. The next time I make it I will probably use two regular crusts instead of the one deep dish. It did seem to take quite a bit longer than the recipe called for to cook.

Macaroni Salad

I love this macaroni salad and have made it several times. All of the extras -- pickles, olives, green pepper, etc give this macaroni salad great flavor. And best of all, it's really easy to make.
