Grilled Vegetables with Balsamic Vinegar

Great recipe for my first time making grilled vegetables. I used zucchini, red peppers, mushrooms and onions. I made the marinade in a sealable plastic bag then added the vegetables. This made it easy to rotate when marinating.

Perfect Peach Smoothie

I made it exactly to the recipe. It was good! Next time I'll probably decrease the OJ slightly and increase the soy milk. I used lightly sweetened vanilla soy milk and to my surprise, it tasted sweet enough for me.

Seafood Creole

Delicious! I followed the recipe almost exactly using 1 can of fire roasted diced tomatoes instead of the fresh tomatoes. I ate it over tri-color pasta with a side of white bread. It may have been even better over rice.

Chocolate Chip Cookie Layer Cake

I neeeded a birthday cake for a coworker who loves choc chip cookies so I tried this. It was really good! I did what another reviewer suggested and used 3 9in round cake pans. I just sprayed them well with cooking spray. The layers were even and came out easily after a little help in getting them loose. Do not overbake this cake. As soon as it looks as if the batter will harden when taken out from the oven.

Burgundy Roast Beef

Honey-Brined Fried Chicken Breasts

Maybe I did something wrong? I like salt, and this was very salty. The only thing I did differently was the chicken soaked for 24 hours in the marinade. I'll try this again and reduce the salt and cook the chicken a little longer (it doesn't seem as if you can overcook this chicken).

Flavorful Beef Stir-Fry

Simply the best beef stir fry I have ever made! I can't believe how tender the beef was. I agree with the others that it is easy to alter the ingredients to your taste and to double the sauce.

Tangy Shrimp and Scallops

My husband and I both enjoyed this recipe. I used lime instead of lemon (because that is what he prefers) and I added some fresh cracked pepper. Due to a cold windy NJ day, I also had to bake them in a preheated 425* oven. Its a keeper recipe!

Buffalo Chicken Fingers

My husband and I love this recipe. I add smaller pieces to salad to make buffalo chicken salad. The only thing I do differently with the recipe is about 1/4 cup hot sauce to the egg mixture. It enhances that buffalo chicken taste.

Buttery Corn Bread

I have never been able to make good corn bread until now. Thank you! The only thing I did differently was I added about 3/4 can of creamed corn before pouring the batter into the pan. It just took a few minutes longer to bake.
