Excellent. I followed the recipe exactly as stated. I made sure I cream the butter and sugar until the sugar was disolved, then added the eggs one at a time until they were completed incorporated. I added the extract to the buttermilk and mixed a little flour into the egg mixture then a little buttermilk, etc. I did add a chocolate glaze to the top and sprinkled with more coconut. 10 stars.

Mom's Favorite Baked Mac and Cheese

Swedish Rye Bread

Cranberry Hootycreeks

The flavor was great, but every batch just kind of melted on the cookie sheet. I chilled the dough, then I tried using it at room temp, finally I scooped it into paper lined mini muffin pans. They shrunk a little in the middle so I put some more white chips on when hot and added a dried cranberry. TFS

Coconut Macaroons III

Very good. Mine seemed to dry out a little faster than usual and they were kept in a tight fitting container. I dipped them in dark chocolate on the bottom, next time I'm going to coat the whole macaroon in chocolate.

Norwegian Waffles

Very good. I may play with the recipe next time. They had a nice mild vanilla taste. Trying melted butter in stead of shortening may be the trick. I will be making this again, if low on time exactly as is, if not I'm going to play a little with ingredients. A keeper. TFS

Whoopie Pies VIII

"Ooohhh yyaaahhhhh!" Boyfriends quote and rating. Took some of the cakes and painted it with melted raspberry fruit spread before adding the filling. I bet it would be excellent with a liquor like Kahlua, Chambord or Frangelico...um umm.

The Best Red Enchilada Sauce

I didn't really care for this. It was way too thick and had a bitter taste. I use the same chiles for Mrs Espy's and it isn't bitter. I think I'll stick with her's.
