Fresh Southern Peach Cobbler
My husband is Southern born and I am Northern born. I have mastered a lot of southern dishes except for Peach cobbler. I found this recipe and made a few changes and he loved it! I used frozen peaches (slightly thawed)and since I used them I increased the cornstarch to 1 1/2 tablespoons. I also added a scant 1/2 teaspoon of almond flavoring. The "biscuit dumplings" were the best, although I did not add the cinnamon to the sugar for the topping. WILL DEFINITELY keep this recipe handy.

Old Fashioned Coconut Cream Pie
I have to admit I always made this kind of pie out of a pudding. Thought I'd try the "old fashion way". NEVER again will my pie come out of a box. This recipe is amazing, although I did make the change that most recommended using 1 c. coconut milk and 2 c. half n half. The taste was excellent. It thickened quite nice using flour. Thanks again for submitting this recipe. (and my husband thanks you too!)

Sweet Zucchini Relish
The garden is producing so many zucchinis, we can't eat them fast enough! I found this recipe and with the suggestions of others made the relish and boy do we ever like it. I am going to make my second batch next week. Suggestions were to cut the sugar down to 2 1/2 c., added 3 chopped jalapenos, used apple cider vinegar and a 1/2 T. of dry mustard. Thanks everyone for your suggestions.
