After spending time in India earlier this year, I wanted to try making some Indian dishes. This is the first curry I've ever made and I was surprised at how easy it was. I didn't have all the ingredients on hand so I improvised. I had no paprika and had to substitute ground ginger for freshly grated. I also had to substitute ketchup for tomato paste. I didn't have coconut milk, so I threw in a handful of coconut, some milk, and some extra yogurt. I followed one of the reviewer's suggestions and roasted the spices together before adding any of the other ingredients. At the end, to make up for missing spices, I threw in more cayenne pepper and ginger. I thought the curry was great and it smelled wonderful. I'm looking forward to making it again with all the ingredients. I'll try using Indian Chilis next time instead of just curry.
