Beef Pot Roast

Cheddar Pear Pie

It was a great foundational recipe, and I would make it again. I had less pears than required, so I threw in an apple. I also used sharp cheddar, though it was *not* very evident in the taste of the pie. It has a great fruit pie flavor, and I think next time I would add chopped walnuts to the crumble topping for nice compliment.

Really Basic Peanut Butter Cookies

Awesome and as easy as promised :) I did reduce the brown sugar to 1/2 C, and added 1/2 C of oats per other reviewers' suggestions. I would make them again in a heartbeat, and they are a perfect way to satisfy my late-afternoon sweet craving!

Easiest Peanut Butter Fudge

It was incredible! I added 1 C of peanut butter (instead of 3/4), only 2 C of confectioner's sugar (because I was out), and almond extract instead of vanilla, and it was *plenty* sweet ;) I can't wait to play around with the flavor a little more, and create my tasty variations...

Peanut Butter Cocoa No-Bake Cookies

These cookies are AMAZING, and sooo easy! I did boil the chocolate mixture for 2-3 minutes like others suggested and also used crunchy peanut butter which eliminated the need for extra peanuts. The recipe made 3.5 dozen medium-size cookies. I would make them again in a heartbeat!!!

Waffles I

Fantastic waffles, very crisp and tasty! I used almond extract for a unique flavor. VARIATION: Add diced fully-cooked bacon to waffle batter before closing lid of waffle iron.

Cake Mixes from Scratch and Variations

Absolutely the BEST cake I've ever made!!! I followed the prior suggestions of using oil instead of shortening, and increasing the milk to 1 1/2 C. I made mine almond flavored by using 1/2 tsp of almond extract, with 1/2 tsp vanilla, instead of the 1 tsp vanilla. I don't have a sifter so I made sure to avoid packing down the dry ingredients and mixed them loosely with a fork. My fiance and I both raved about it and I can't wait to try the other variations, playing around with new flavors!

No Bake Oatmeal Cookies

I give it a 4 stars only with a few alterations. I didn't have cocoa powder, so I melted one square of semi-sweet baking chocolate into the butter. I also reduced the butter to 1/2 C (one stick). To make the cookies stck together, I added 4 Tbs. of peanut butter (I like crunchy, but you can use any kind). I loved the end result!!

Banana Milk Drink

This drink was great!! I found it years ago in a Lifeskills textbook, and loved it then...so excited to find it again :) I always add 4 ice cubes to this drink to give it a better texture and colder temperature.

Incredibly Cheesy Turkey Meatloaf

This was *THE* best meatloaf I've ever eaten! I did follow other reviewers advice of soaking the breadcrumbs in the milk, and I'm sure that added a lot. The other alterations I made were adding (couple dashes of each) Worcestershire sauce, chili powder, garlic powder, oregano, crushed red pepper, 3/4 C chopped onion, 1 clove minced garlic, substituted kosher salt for regular salt, shredded the cheese, and covered with classic BBQ sauce instead of ketchup. My fiance raved, and we both would make this easy meatloaf again in a heartbeat :)

Easy, Cheesy Tortellini Bake

Absolutely fantastic and so easy I could not believe how great it tasted. It needed a full 20 oz. of tortellini to adequately utilize the amount of sauce ( used 16 oz. of Alfredo and 24 oz. of marinara). I added a small can (6oz.) of mushroom pieces, several shakes of red pepper flakes, and several generous shakes of garlic powder to sauce when simmering. I also used 4 oz. of **fresh** spinach, and didn't add it until 3 minutes before the sauce was done. It made incredible leftovers and it didn't last three days before we had devoured it all!

Easy Meatloaf

I thought this one was incredibly good. I did add about 1 Tbs. of Worcestershire sauce, 2 tsp. garlic powder, and 1 tsp. of crushed red pepper. I also used 2 Tbs. of instant minced onion in place of the fresh onion as I was short on time. Still, I was impressed!

Grandma Sophie's Smashed Potato Salad

I halved this recipe and it was still incredible!! So easy and yet, the flavors just worked. I did add some mustard (a couple squeezes), some sliced olives, and about 1/2 C fresh chopped onion. I had trouble not sampling too much before I served it ;)!

Slow Cooker Barbecue Ribs

This dish was phenomenal!! I also substituted the barbecue sauce for the ketchup, and the ketchup for the chili sauce, and it turned out perfect. I used spare ribs, and cooked for 6 hours. I did add a little crushed red pepper into the sauce too. I served it with Grandma Sophie's Smashed Potato Salad (also from this site), and corn on the cob...it received rave reviews from my boyfriend, and he's not even a big rib fan!!!

Coconut (Haupia) and Chocolate Pie

Definitely delicious!! I added sweet coconut shavings to the white portion of the filling and thoroughly enjoyed it. I might add that coconut extract next time for a stronger flavor, but overall, a wonderful recipe and so easy.

Steak Tip Marinade

Oh my goodness! It was *so* good...we ended up broiling the steaks (top sirloin thin cut) for about 15-20 minutes total. I was only able to marinate for 1.5 hours, and still felt the flavors absorbed enough to notice. I served it with cooked orange squash, and mushroom-flavored couscous (from a box). The three dishes made an excellent meal.

Cheesy Kielbasa Bake

I loved this one initially, and so did my boyfriend... it was very filling. I would not make the full serving as I was not able not stomach eating it reheated. Maybe I'll use a thicker tomato sauce next time? I had to water mine down a little cause there wasn't enough...

Easy, Cheesy Zucchini Bake

It was pretty good, a little bit of trouble with the wateriness, but not too much to notice. I didn't bother layering, just dumped one mixture on top of the other. I did add olives before adding cheese, and it was a definite plus. Everyone loved it, and it felt healthy, and so chocked with veggies.

Chicken Pasta - Shannon Style

It was good, and fairly easy to make, but a bit too bland for my taste. Maybe it would have been better with the feta cheese someone else suggested? I did add olives and thought they gave it a little more kick...
