this was AMAZING! was skeptical at first because i don't like tea, but WOW! followed recipe almost exactly, except didn't measure sugar, just poured until it was sweet enough to our liking. made a double recipe for a slush machine...SO good!

Mascarpone Strawberry Cupcakes

i really liked this recipe, and my coworkers did as well. i was looking for something "pink" for a baby shower. i also added about 3 tablespoons of pureed strawberries in syrup to the batter. the cupcakes were somewhat dense, they rose, then fell, but were definitely moist. i did bake them for 30 minutes, instead of 20, because i wasn't sure if they were done. the extra cooking time did not negatively affect the outcome.

Classic Key Lime Pie

my whole family loved this! i cheated because i used already-made graham crusts that were given to me by someone who bought them by accident, so i was trying to think of something to use with them. this fit the bill perfectly! since i love pecans, i chopped some and sprinkled them on the crust before browning in the oven. i was skeptical about the whipping cream on top, but it was delicious and i look forward to making this again! if i ever make the crust from scratch, i will add pecans throughout the mixture. a local restaurant here does that with their key lime pie and it's great. it gives the crust more substance.

Old Fashioned Peach Cobbler

YUM!!! i normally don't like cobblers and pies with fruit filling, but since my family and i got the opportunity to pick some wonderfully, sweet, Texas hill country peaches, i decided to make a cobbler. this recipe was JUST what i was looking for. it even worked well with me halving all of the ingredients for a smaller cobber. the crust was fantastic (i used butter instead of shortening). i also used a little brown sugar, along with the white sugar, in the peach mixture. my husband said the recipe was a keeper...i tend to agree! :)

Ramen Coleslaw

this was OUTSTANDING!! i've been wanting a good slaw recipe for a while...this is a keeper. everyone in my family enjoyed. i cut back on the green onion so it wouldn't be overpowering for the kids, and i used olive oil instead of veggie oil. also used red wine vinegar b/c i couldn't find any white wine vinegar at the supermarket. also, used about a tablespoon of the hidden valley ranch slaw mix in the bottle because i had it on hand and don't want it to go to waste. finally, used the sliced, honey-roasted almonds for salads instead of the plain sliced almonds. if you use these, they won't need to be roasted w/the sesame seeds. GOOD EATS!!

Southwestern Black Bean Stew

excellent recipe!! i had to double the recipe for my family size. my kids loved it. even my daughter who claims she doesn't like corn; but she scarfed this dish down. the only thing i did differently was added some chopped onion, bell pepper and a can of petite diced tomatoes (plain--no flavor added). and a little extra seasoning to taste. i also added the sour cream directly to the pot and stirred in, instead of adding to individual servings and served with tostitos. this is definitely a keeper!
