Quinoa Tabbouleh

Reviewed: Jun. 2, 2003
This recipe is almost the same as the one I've been using for years--minus the carrots and cukes. Helpful hints: Wash quinoa before cooking. Qunoa has a white powder-like substance on the grain that needs to be rinsed off before cooking. To speed cool quinoa--put in frig or freezer. To successfully chop rinsed (wet) parsley: remove stems and throw in food processor OR cut using kitchen scissors in a small tall-sided bowl. Another hint: remove seeds from tomatoes before dicing.

Very yummy! The whole family loved this sauce for our chicken enchiladas. We used Mexican chocolate for an even more authentic taste. Will make again.

Southern Living Magazine's Chicken-Fried Steak

Reviewed: Aug. 26, 2002
I'm vegetarian, but the rest of the family is not. I made this last night and heard wonderful reviews. I did not make the gravy, but used store bought instead (not enough milk in the house). Typically, we taste and review recipes for alternation next time. My husband and son said "make no changes, it's great!". Definately a keeper!

Absolutely The Best Shrimp Scampi

Reviewed: Aug. 12, 2002
Very delicous. We added 1 T lemon juice at the end. We used butter instead of olive oil. No brandy in the house, but still very yummy. How to chop fresh parsley??? Trim stems and cut parsley using kitchen scissors in a small, tall sided bowl. Makes the chopping process so much easier. Will make again and again!

Good, but kind of bland. Had to doctor with herbs and chicken stock. Not enough broth in soup.

Russian Vegetable Pie

I was surprised by how tasty this was! I only used 4 oz of mushrooms, because I was saving some aside for another recipe. Next time will use the full 8 oz the recipe calls for. I also used frozen pasty crusts. Very delcious. Must be a Russian comfort food!

Very yummy! I did not have a mini muffin tin, so we used a regular muffin tin. They were more like tarts. Curd was delicious. Will make again.

Portobello Sandwiches

Very yummy. I reduced the vinegar by one tablespoon and added red cooking wine. We cook this on the grill, about 1 1/2 to 2 min each side. Delicious even without the caper mayo! My 10 year old loved it, and he doesn't like mushrooms. Thanks for the recipe.

Naan

Reviewed: May 20, 2002
I made this recipe the other night and served it with Indian dahl. My family had never had naan before, and were rather questioning it at first. One bite and we were hooked! A very yummy flat bread. I did not have enough white flour, so I used half whole wheat and half white flour. Will make it again and again!

Indian Dahl with Spinach

Reviewed: May 20, 2002
I have recently switched to a vegetarian diet and am collecting good vegetarian recipes. I have been looking for a good dahl recipe and this is it! After reading the other reviews, I tripled the salt, doubled the tumeric and cumin and added a little red pepper. My husband, a meat eater, was ranting and raving about wonderful this dish was. I served it wtih naan and rice. I have sent this recipe to friends who asked for it. Definately a keeper! Will make it again and again...Thanks for the recipe Gillian!

Orange Sauce for Crepes

Reviewed: May 7, 2002
My mother used to make a sauce like this for pancake syrup. It was my favorite syrup as a kid. I'm happy to have found the recipe again. This sauce has many uses. We used it over pancakes. I added ginger to leftover sauce and cooked with carrots for orange-ginger carrots. (very yummy!) I also used leftover sauce with red pepper flakes for orange-spicy chicken. Thanks for the recipe!
