Good Old Fashioned Pancakes

I followed the recommendations of TEVANS211 on how to combine & mix the ingredients and also added the 1/2 tsp of vanilla. My husband thought the batter looked too thick so he added another splash of milk. The resulting pancakes were very fluffy and the family gobbled them all up (made 16 pancakes approx. 4 in diameter) I felt like there was too much salt for my taste so will decrease the salt to half teaspoon next time. We typically make buttermilk pancakes so this is a great recipe to use when we've no buttermilk on hand :)

Raisin-Filled Torte

I haven't actually made the cake yet, but it sounds amazing. I did make the raisin filling and use it for kolaches. Very tasty!

Cheesy Chicken Pot Pie

Love this recipe! It's a go-to recipe for after Thanksgiving turkey leftovers. I add onions and use up leftover veggies from the veggie tray. Sometimes bake in a dish with biscuit dough on top instead of making pie.

Coco's Meatloaf

Everybody loves this meatloaf recipe! I do use red bell pepper instead of green. Every time I make it, the family tells me I should have doubled the recipe so we would have leftovers. Once I used crushed Ritz crackers as I ran out of saltines and that was great too. I do use my grandmother's meatloaf glaze of ketchup, mustard and brown sugar simmered on the stove until combined and then spread on top of meatloaf with extra for dipping.

Pecan Pie V

Apple Toast

A fun treat! I surprised the family with these one afternoon. They loved having this quick appley-cinnamony snack. Not as good as apple pie but a great way to quickly satisfy a craving for apple pie. I did mix the cinnamon with some brown sugar. My husband loved it, but he did offer the suggestion of toasting the bread a bit first (as other reviewers have suggested) so I might try that next time.

Mom's Turkey Sausage Patties

LOVE IT! I never thought I would ever make homemade sausage as I thought it would be a messy, time consuming activity. This is so easy. I toss the ingredients into the mixer and let it combine the ingredients. Then I shape into patties. Tried making links once but they ended up as short little chunks so I'll probably stick to patties. I haven't cooked with ground turkey much so still adjusting to the way it cooks - tends to shrink a lot in length and get thicker so I try to make big flat patties. I don't like too much spicy kick so I reduce the cayenne to just a dash. I have crumbled up leftover cooked sausage as pizza toppings and family LOVED it. Might try adding some fennel seeds sometime and make a batch of crumbled sausage to freeze and keep handy for adding to pizzas (frozen or homemade).

Apple Dumplings I

Excellent flavors and quite easy. I made adjustments based on some reviews. Perhaps should have read more reviews as I diced up 3 apples (instead of the recommended halved 4 apples) and couldn't fit all the apple pieces into the biscuit dough. I tossed apple pieces with cinnamon sugar. Baked dumplings for about 15-20 minutes without sauce. I couldn't flip dumplings over as they were placed too closely together in baking dish and baked together making it difficult to flip dumplings over. Didn't add water to sauce but added leftover apple pieces so got liquid from that. Poured sauce (with leftover apples) over dumplings and cooked additional 15 minutes. The apples in the sauce were less cooked than the ones inside the dumplings due to less time in the oven. However, the family agreed it made for a nice combination to have some fully cooked apples and others slightly cooked so still a little firm. We actually had this for breakfast so didn't add ice cream. I do think I'll try baking with sauce from beginning next time to see what we think about that, or I might try a 9 x 13 dish and separate the dumplings more for initial baking if I chose to add sauce later. I will also probably up the cinnamon to at least 3/4 tsp as family loves cinnamon. Recently discovered Saigon cinnamon and very pleased with the flavor.

Overnight Eggnog French Toast

This was an easy recipe to prepare. I used Texas Toast bread slices. I used 10 slices this time but will probably reduce to 8 slices next time. I cut the bread into large cubes. I did also add extra cinnamon (1/4 tsp) and nutmeg (1/8 tsp) as I usually add more to the eggnog I buy at the store. I liked being able to prep the night before and bake in the morning. I was worried about the cooking time and did leave it in about 15 minutes longer. Next time I will take it out closer to the recommended time though as it does continue to cook after removing from oven.

Chicken Spaghetti

Nice & easy meal I turn to as I usually have most ingredients on hand (I recently discovered pimentos and love adding them to dishes now). Once I even went an easy route and used frozen chicken nuggets as that's what I had on hand. I also use shredded sharp cheddar or monterey jack cheeses because that's what is usually in the fridge. The pimentos and peppers give a nice flavor. Sometimes I kick it up a notch with some taco seasoning or chili powder. I often throw in whatever veggies I have on hand like onion, mushrooms, carrots, whatever. A can of mushrooms is a quick easy way to bulk up the dish.

Three Animal Italian Meatballs

Yay! I found the meatball recipe I needed. Excellent flavor and texture. I've tried several meatball recipes and this finally has the flavor I'm looking for. I used mild italian sausage. I browned in the pan as suggested and am pleased with the results. Wasn't sure about using ground turkey but it worked!

Grilled Pork Tenderloin

We loved this! We regretted only cooking on tenderloin and will definitely always cook at least two each time from now on. The flavor is amazing considering how little effort is involved. I love that my husband takes care of cooking these on the grill freeing up the kitchen for prepping side dishes.

Fluffy French Toast

Banana Crumb Muffins

Yummy! Easy to make, but leaves you with a lot of dishes to clean up afterwards. Worth it though! My batch made 12 muffins. The muffin is amazingly light and fluffy. I accidentally used 2 Tbsp of butter in the crumb topping and seemed to turn out fine. However, the bottoms of the muffins were very greasy (I used paper liners)...not sure if that related to the extra butter on top or if it was from the muffins. I just sat them on paper towels to soak up some of the butter.

Marinated Flank Steak

Very tasty! A big hit with entire family. Very flavorful. We mixed one batch of marinade for two flank steaks. We put everything in a large baggie and only marinated about 4 hours. We'll try marinating overnight when we have time to plan ahead :)

Mushroom Cube Steaks

This was a hit at our house. My husband saw the recipe pulled up on the computer and couldn't wait until supper because he was so excited that we were having Mushroom Cube Steaks. I really liked the hint of dijon mustard flavor and always love worcestershire in beef dishes. Based on another review, I did add a little red wine when I sauteed the onions and mushrooms. Oh, I did used canned mushrooms as that is what I had on hand. I'm sure it would be even better with fresh mushrooms.

Slow-Cooked Corn Chowder

This was an easy and tasty recipe. I did add some carrots and set a bowl full of bacon bits on the table for people to add. It was well received at the soup luncheon.
