Chuck Wagon Chow

This is a delicious, hearty meal. I made mine with a mix of 15 beans, turned out well. Just cook the beans first, then cook the beef (it might not need 40-50 mins- I added the liquid and cooked for 20 minutes), then combine the two. Delicious. Also, I didn't have corn but served it over corn bread.

Norwegian Meatballs

I'm not Norwegian and I've never been to Norway, but these are ah-mah-zing! I used just pork because that's what I had. So delicious! I could have used a little more of the spices and will next time, but we prefer bold flavors in our house. The gravy is delicious, I use it for other things. (Try it with minced mushroom thrown in with the onion)

Bubba's Jambalaya

It's alright, you'll get a decent jambalaya from this recipe. I thought the rice to meat/veg ratio rather high, might make it with less rice. Even after adding garlic and seasonings, it seems to be missing something. Husband likes it (he's Australian and not from the south..) and he stirred through a few handfuls of steamed shrimp.

Whiskey Hamburgers

These burgers taste just like the ones I used to get at my favorite burger joint in Austin, Dirty Martin's. Be sure to cook them through or they'll taste alcoholic; when you cook off the alcohol it's insanely delicious.

Cream of Mushroom Soup II

Perfect. I'll never use canned again and I'm shocked at how easy this is to throw together. I like to make a double batch and freeze it by portion sizes.

Potato Leek Soup I

Top notch. I made it with 3 lbs of Dutch Creams (all I had) but otherwise exactly as per recipe. It's a lovely, subtle soup with a light but deep flavor. I garnished with fresh marjoram because I didn't have any parsley. I'm always looking for good soups to serve before dinner or with a salad for a light lunch, this is wonderful for that. Make sure you don't burn the butter.

Sweet Potato Pie I

This sweet potato pie is delicious. Maybe my potatoes were naturally sweet, but I found 1c of sugar to be cloying. I used about 1/3c in my last pie and it was to my liking. I also baked this without a pie crust for a celiac friend.

Pakistani Lentil Curry

I followed this using freshly ground spices, served over rice. I didn't bother soaking my lentils, I threw them in and boiled for about 40 minutes. I forgot the milk but it was perfect anyway. I eat lentils several times a week, I'm always looking for new and interesting dishes. This one quickly became my favorite. De-licious. Do taste as you cook so you can adjust spices for your preference. I like to put in diced carrots and potatoes or sweet potatoes.

Texas Pork Ribs

USE TOMATO PASTE FOR THE KETCHUP. Use an extra onion or two, and sautee the onion until it almost dissolves. Then you add the tomato paste. If you do that, and make sure to cook the sauce reeeeeeally slowly, this makes the best b-b-q sauce you have ever put between your lips. If you get impatient, the sauce will scorch and taste nasty.

Oatmeal Strawberry Bread

This came out like two enormous strawberry oatmeal breakfast bars. It slices really well. Amazing. I tried it per the recipe (1.5 c raw sugar) but I think I'll try the puree version and try to reduce the sugar further. This was really, really thick going into the oven. I think it has to sort of melt together. Freezes really well.

Spinach Lentil Soup

Husband and I really liked this soup. Only four stars though because I was looking for something thicker, will probably use less water next time. I didn't have any stock on hand, just used water and it was flavorful enough from the garlic I added and the sausage seasonings. I used a lamb sausage that I had around, it was quite good. Finally, I used cabbage instead of spinach since we have an overabundance at the moment and it is REALLY good with cabbage. I just shredded it and added in the last few minutes, let it cook down a bit. So good.

Carrot Cake III

!/2 Brown sugar, 1/2 white; extra t of vanilla and of cinnamon, and I made without nuts- this is a fantastic recipe, don't think I will ever need another one for carrot cake. It is moist and soft and delicately flavored. It's even quite nice for tea without the frosting. Wonderful.

Mom's Zucchini Bread

This is really good, I will make it again. No nuts, 2 c sugar- half of it brown, 3 cups zucchini. Might try subbing half the oil for mashed banana next time. Very moist, sweet enough but not too much so.

Creamy Au Gratin Potatoes

This is a really really tasty recipe, wow. Comfort food to the max. And the sauce is a good cheese sauce, I've used just that for other things. I'm thinking of making this again and putting in chunks of ham or sausage and maybe some corn- more of a main dish all in one. I added a little pinch of paprika to the sauce after the cheese, I like the flavor it gives. I'm sure this would have been perfect without it.

Roasted Chicken Noodle Soup

This is really lovely soup, I made it with a leftover rotisserie chicken that I boiled down for stock. Didn't have poultry seasoning, added a pinch of paprika and used a bit more salt. Subbed broccoli stalks for the celery and threw in some chopped broccoli heads. Used bowtie pasta and regular milk. So you can see its a really flexible recipe. It turned out just gorgeous, like a tasty house soup from a nice cafe. Will be making more most definitely.
