About this Cook
I am a gluten free girl (Trust me- not by choice but by design!), so I am pretty good at improv and changing recipes to suit my special diet.
My favorite things to cook
Southwestern cuisine. The hotter the better! I also enjoy traditional Italian, German and Irish as well.
My favorite family cooking traditions
I grew up in an area with many different ethnicities. So most events would have combinations of Mexican, Italian, German, Eastern European, and Irish dishes. To me, it is perfectly normal to "mix it up". Christmas dinner with green chilli, stuffed shells and Kielbasa says "home"!
My cooking triumphs
The first time I made an entirely GF dish sans recipe!

For some reason- I just cannot do fried potatoes worth a darn

Chicken with Quinoa and Veggies
Really, really good! As a Gluten Free family, finding new recipies that I don't have to convert is difficult. This one fits the bill! The flavors are amazing and prep is easy. Next time I make it, I think I'll add more veggies and no meat. With the quinoa, meat just isn't needed.

Really good! However, I made quite a few changes because of my food issues. 1) I used real crab. Snow crab to be exact. 2) I used lemon zest and ground pepper instead of lemon pepper seasoning. 3) I didn't have ramano, but I did have Parmesan and feta... Awesome on toast points. I wish I would have had portabello mushroom caps, because I think it would make great stuffed mushrooms.
