The Best Banana Bread

Yummy - I love this....so moist. I used 3 large bananas and added 1/2 tsp cinnamon and 1/2 tsp nutmeg. Wow! I did only cook it for 45 mins. I live in the mountain so that may have made a difference. Yummy. Will make again.

Easy Lasagna II

Loved it, made it just as directed. Only problem I had was that there was just not enough meat sauce for me. Flavor was fab and the kiddos loved it too.

Delightful Carrot Cake

I really liked this. It was my first attempt at carrot cake and it was pretty easy. I did add about a cup of shredded carrots from my garden too. It was a little dense for my taste. Got to figure out how to solve that.

Fajita Marinade I

This was pretty good. It was my first time at this. I will most likely omit the salt next time. There is enough sodium in the Soy Sauce. Loved the liquid smoke. Great grilled taste without grilling.

Chicken and Rice Casserole I

This was pretty good. I did not use instant rice and it cooked just fine. I do agree with other people that it was a little salty. I would use a little less onion soup mix. I think I would also throw some fresh veggies in it.

Mom's Ginger Snaps

Yummy! I am teaching myself to cook and loved these. I did double the spices and used 1/2 cup oil and 1/4 applesauce. I used a scoop to do most of them and they turned out okay, but if you roll them into the ball,they turn out looking just like store bought ginger snaps. I love these and so do my boys.

Baked Oatmeal Squares

I had the same problem as others with it being crumbly. So, I crumbled it all up, put it back in the oven at 250 for 45 minutes. Turned out to make a great cereal. I only put 1/4 cup sugar in it and 3 tbsp honey. I did not put nuts in it because we have a nut allergy in the house, but use 1/4 cup of coconut instead. Worked out great. I think next time instead of raisins I will used dried cranberries. It is just a tad sweet for me.

Supreme Strawberry Topping

Loved this....yummo. I mashed the strawberries as it cooked and skipped the blender. It was just right. I also made sure to put all the strawberries in. Another point is that you can use older strawberries that are not so fresh any more to make this.
