I have 2 little girls, 6 & 9, and a great husband. We love to camp in our travel trailer and do things outdoors, especially in the summer/fall. I absolutely love to run and do races down in Phoenix. I aspire to running a marathon (someday!)
My favorite things to cook
Our family likes Mexican food, and I cook a lot of chicken. We try to eat as healthy and organic as possible and try to incorporate that in the foods I cook. I like making birthday cakes for my girls and I have fun planning out of the ordinary meals to take camping in our trailer.
My favorite family cooking traditions
I enjoy making family recipes handed down from my mom and mother in law but I really like trying new recipes as well to keep it interesting.

Ginger Glazed Mahi Mahi
delicious and simple using ingredients from the pantry. My kids told me this recipe was a keeper. Use fresh ginger.

Colleen's Slow Cooker Jambalaya
liked a lot. However, VERY spicy. Next time I will only use 1/4 tsp of cayenne. I also put raw shrimp in the last hr of cooking. I experimented by putting in 1 1/2 c of rice the last hour. It was way too much rice. Next time if I add rice I will put 1/3 cup in or just serve over the rice. This was ready in my slow cooker on LOW for 5 hrs. Yummy! Oh, also, might need a little salt in there too...

To Die For Blueberry Muffins
I think they might have been better if they were a little sweeter. Will use more sugar next time. The batter was very thick and I used a splash more milk than called for. Baked 375 on convection bake setting about 21 min in a silicone muffin pan sprayed with canola oil. They still had a little trouble coming out. They were pretty moist, a good muffin though.
