Busy Mom's Spaghetti Bolognese

Way too much meat, this recipe equals 1/2 lb of meat per person! I cooked as instructed but added 8oz tomato sauce. One box of noodles wasn't enough for the sauce so I saved half of the sauce for later, and it was still too much meat. Next time I'd use 1/2 lb meat. Actually, I don't plan on making this again.

Slow Cooker Chicken Marrakesh

This recipe wasn't bad but it was quite bland, which surprised me. I added some garam masala and coconut milk at the end to add more flavor and I added red pepper flakes to my individual bowl and served over rice. In the future I will sprinkle additional spices directly onto the chicken as it cooks.

Puerto Rican Pork Roast

Very, very good! I substituted a Boston Butt Roast and cooked it on low in my crock pot for 7 hours. Fantastic!! Even my kids raved about this recipe, and they do not like pork roast!

Very bland. I'd use fresh tomatoes, add more spice & season chicken heavily next time. Or skip it & use jarred sauce. Not very good.

Chocolate Chip Muffins

These were very, very good! I added a few more chocolate chips than the recipe called for and about 1/8 cup of extra oil to make the batter more pourable. I made a second batch using blueberries instead of chocolate chips and they were good, too!

Irish Soda Bread Cookies

Very good cookies, not too sweet. I made a few adjustments: I prepared these as drop cookies so I doubled the batch. Doubling made 5.5 dozen, if I had formed them more uniformly they would have made 6 dozen. I substituted raisins for currants. I used regular milk with a splash of vinegar instead of butter milk. I had to add an extra 1/4 cup of milk to the batter. I skipped the caraway since these are going to a kid's classroom. The cookies were easy to prepare and baked up beautifully! Next time I want to try sultanas or dried cranberries and add a pinch more sugar.

Quick Yeast Rolls

Not sure what happened but the dough was so sticky I couldn't work with it, even after adding almost double the flour. I ended up forming them into two large round loaves and cooking at 375 for about 30 minutes. They're ok though a bit too sweet.

Addictive Sweet Potato Burritos

These really are addictive! I make these every 2 months or so and double the recipe so I have a lot to freeze for quick lunches. The only changes I make are to use fresh sweet potatoes that I boil and mash, and I puree the beans in a food processor with the spices and water, then add them to the onions in the skillet and cook just until warm.

Thai Noodles

Very tasty dish and great over rice noodles. The cucumbers were a little weird in it so I'll skip those next time. I added extra bell pepper and a bit of broccoli to stretch the meal out a bit, and I used BLSL thighs.
