Canned Apple Pie Filling

Haven't baked with the filling yet, but tastes great! I used only 2 1/2 cups of sugar, added 1/2 cup sugar and extra cinnamon and nutmeg as recommended. This is the second time I've made it. The first time was not in a wide-mouth jar. I didn't "cram" the apples in and ended up with apples on top and syrup on bottom. Next time I used wide-mouth jars, packed the jars tightly with apples, then poured the hot syrup in. At first I thought the syrup was too thick, but by the time I filled all the jars the syrup in the first ones had made its way down the jars. Just to see what I would get, I saved the peels and cores and made applesauce with them. I used the extra syrup for the applesauce spice and jarred it as well!

Cornbread Muffins I

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

All 4 of my kids LOVED this! That rarely occurs... I made some changes (mostly by mistake) and it still turned out great. Very forgiving recipe for those of us who don't thoroughly read directions before starting:) I flattened the chicken breasts, then marinaded them in Italian dressing (I was making a different recipe but didn't have all the ingredients). Watch closely when you brown the stuffed breasts in the hot bacon grease, I burned a few but they still tasted great. I had extra filling so rather than make the onion potatoes, I cut the potatoes into thick slices, browned then, then tossed in the extra filling. At first it looked like a mistake, but it all browned nicely and the kids consumed them too. Thanks for a great recipe!

Banana Pumpkin Bread

I made a wheat-free, gluten-free version that turned out great! Having tried a few gluten free baking mixes, I found Pamela's Baking & Pancake Mix the best. Eliminate the oil, baking powder, and baking soda. Other changes (as recommended by others): increased banana to 3 and cooked in mini muffin tins about 20 minutes. I made half with raisins (some of my kids don't like raisins). A big hit! Thanks

Rosemary Ranch Chicken Kabobs

Just made it for my teenagers and they all loved it! I used an earlier comment and roasted them in the oven (15-20 min at 425). The kids love gravy on everything so after putting the kebabs on a platter I skimmed off the fat, mix a tablespoon of flour with cold water and whisked it in the pan at high heat until it thickened and poured it over. Great recipe, thanks!
