Baked Ziti II

Baked Ziti is supposed to be cheesy. This dish was awesome. I modified by using 15 oz. of ricotta 2 heaping tablespoons of sour cream. I made my own sauce of 2- 28 ounce cans of crushed tomatoes, 1 C. of Chianti, basil, onion, garlic, ground beef, and Italian Sausage. I liked the macaroni and cheese aspect with the "gravy" on top. Will make (and share) again.

Grilled Salmon I

I substituted honey for brown sugar and used lemon juice rather than lemon pepper. I poached in the foil packets (it was too hot outside to fire up the grill.) My hubby thought this was the best marinade EVER!

Mama's Balsamic Vinaigrette

Added a tablespoon of honey to even out the tartness of the good quality vinegar. It is a personal taste thing.

Best Cream of Potato Soup

This is a really good potato soup. I made the recipe, as posted, except I omitted the celery seed and bouillon. It is hearty and thick with complementing herbs and spices. I added grated cheddar cheese and a dollop of sour cream to serve. I would definitely make again. I would like to try substituting herbes de Provence for the thyme one time.

Easy Spicy Roasted Potatoes

I altered the recipe to be diet friendly by omitting cheese, and I used fresh garlic instead of powder to toss the potatoes. The cayenne pepper makes this one a keeper.
