Nicole's Winter Carrot Zucchini Bread

Fantastic. Added flax meal (1/4 cup) to this as well and omitted the cloves (didn't have any) and nuts (for toddler) and came out great. Very moist. Baked in a bundt pan for an hour, which gave it an attractive presentation inside a pie plate. Also, no harm in added a bit more applesauce...

Brie Cheese Appetizer

Chicken Pot Pie II

This was SO good. I used mostly fresh vegetables instead of frozen (only frozen corn and peas) and put chopped red potatoes, carrots, cauliflower, celery, onion, etc in the casserole. Used a big corningware baking dish instead of a pie plate and covered it with the crust. Also, used about 1/2 can of cream of mushroom in the filling and used real garlic instead of powder. Incredibly good and NOT bland at all.

Butternut Squash Soup

This was INCREDIBLE. Like others that have reviewed this recipe, I used chicken broth instead of the water and bouillon. I roasted the butternut (halved, brushed with olive oil, flesh side down) and then pureed it with my food processor. I used two cans of chicken broth and a cup of apple cider. Everything else, was the same, except I used more cayenne. Again, INCREDIBLE. Love this.

Asparagus Medallions

This was very good. I used Cream of Mushroom instead and did this all in a pan, not the oven. I used a little butter with minced garlic and sealed my pork by cooking on med/high heat on each side for a few minutes. Poured the cream of mushroom in, used about half a cup of apple cider and sliced a few apples to cook with the sauce. It was excellent topped over rice.
