Weekend Brunch Casserole

Made for weekend guests yesterday morning and was a huge hit! I made the sausage ahead of time and it was a snap to put together in the morning. Only thing I did different was add some green onion! It was fantastic! Will definitely make again!!!

Sweet and Sour Pork III

So Good!! Better than ordering takeout! The only change I made was using a cup of fresh cut pineapple instead of canned! The sauce is REALLY sweet, so next time I may cut back on the amount of sugar in the sauce....but it was SO GOOD!!!!

Easy Cheesy Scalloped Potatoes

This recipe is very basic. It doesn't seem to have very much flavor. The sauce is rich from the cream cheese, but needs a punch of garlic.

Easy Cheap and Yummy Casserole

My husband actually wanted to rate this with 28 stars! He loved it. I made a couple of changes. I used an 8x8 pan since it's just the two of us and I used the large can of Maple Baked Beans. I added some onion to this. Then, i chopped up 5 to 6 hotdogs on top, sprinkled that with shredded cheddar cheese. Then I used a box of honey cornbread mix and baked for about 30 mins! Quick, easy, and the husband loved it!

Owen's Mozzarella and Tomato Salad

Very good, simple, fresh salad. I added some minced garlic and a splash of balsamic vinegar. It was a hit at the last dinner party! Even better with fresh tomatoes from the garden!

Chicken Enchiladas II

Not really enchiladas....a creamy chicken sauce in a tortilla, which was tasty...but not much spice to it. We ended up putting a fresh pico/salsa on top to give it a little more flare.

Oven Fries

These were GREAT! My hubby and I loved them! I was really worried that they would taste too sweet with the sugar, but NOT AT ALL! It just crisps them up perfectly! The cayenne adds a nice heat to the fries, but if you don't like that, I would change it up and use a different spice. Although, Salt and Pepper alone would be great too!

Quick and Easy Chicken Noodle Soup

This was a great recipe. The changes I made were only using Chicken broth and I used the "homemade" noodles that you can find in the freezer section. It made this soup feel even more like Grandma's!

Cuban Midnight Sandwich

GREAT SANDWICH! My hubby and I both loved this easy sandwich. The only change I made was using Provolone instead of Swiss since that's what we had! This recipe is a staple in our home!

Ham 'n' Cheese Egg Bake

This is a really good breakfast casserole! Very easy. I used deli ham and green pepper since this is what I had on hand. I cut the recipe in half and used an 8x8 pan and it worked great! Will make again when we have overnight guests!

Mexican-Style Goulash

This is a good recipe. You can adjust the flavor by adding more or less seasoning. I added more chili powder than the recipe called for cause my hubby likes it hot! Also added some cumin for a nice smoky flavor!

Crispy Cucumbers and Tomatoes in Dill Dressing
