Gujarati Carrot and Peanut Salad

i was very dubious of this recipe, but i had all the ingredients, so i tried it and was so pleasantly surprised! i added mint instead of cilantro, because that's what i had, and the mint-carrot-peanut combination is much greater than the sum of its parts. try it, i bet you'll like it too!

Cornbread Muffins I

these are amazingly delicious. i was looking for a corn muffin recipe with real corn that wasn't dry as dust and these were perfect. for a moist, sweet, corn-included muffin, these are worth washing the tin for!

Andrew's Herb Risotto

easily made vegetarian, this was a delightful risotto recipe. i especially loved the cooked herbs vs. the fresh ones. i was wary of the cooking instructions though, and made it the traditional way, adding the liquid a little at a time while stirring frequently.

Betsy's Mandarin Orange Salad

everyone is right- i made it with less oily dressing (using fresh parsley) and less onion (i actually used scallions) and i doubled the almonds, and i substituted avocado for the peppers (which my gf doesn't like). and OH! it was SO GOOD! the combo of the oranges, onions, almonds and avocado was a taste sensation! highly recomended.

The Best Veggie Sandwich

it's just as good as everyone says- and it was very quick to make. there are 4 ingredients that need preparing, and 4 muffins that need to be toasted. so i mashed the avocado while the first was toasting, chopped the tomato while the 2nd one was, chopped the onion while the third one was, and shredded cheese during the toasting of the 4th english muffin. yum!
