Baked French Fries I

These turned out great, but I made some changes. I doubled the recipe and cut the potatoes into standard fries, not wedges, and left the skins on (nutritious and delicious!). I used garlic salt instead of powder and they were the perfect level of saltiness for me. I didn't have onion powder, but added 1 tsp each of cumin and dried tyme (for a doubled recipe) and it was great! Also sprinkled with grated parmesan and fresh ground pepper just before baking. The ziploc bag technique worked well, but I found I needed a bit more olive oil than what's listed to coat all the fries. I baked at 400 for about 45min. Will definitely make again!

Chicken Vesuvio

I personally did not care for this. while the sauce was indeed quite tasty the chicken and potatoes were bland -- I marinated it for ~2 hours. Edible, but laking.

Chicken Diane Style

Very easy, very flavorful. I did add some corn starch at the end to thicken the sauce a bit. Served with buckwheat instead of rice, which went really well - soaked up all the good sauce and added a hearty texture!

Moroccan-Style Stuffed Acorn Squash

Very good, but needed a bit more flavor. I added 1/2 tbls of garam masala and pinch of cayenne pepper for some heat and that was perfect. I microwaved the squash as suggested by another reviewer and it took only 5min each half. Next time I would add more carrots and celery and fewer garbanzo beans. Very quick, heaty meal, will definitely make again!

Tomato-Curry Lentil Stew

Yum! I added carrots and a sweet potato that needed to be used and both were great. I doubled the curry powder and added 1/4 tsp garam masala and 1/4 tsp coriander as well as some red pepper. Definitely needed a little spicing up! At the end, I took 1/3 of the stew and blended it in the food processor with some sour cream then added it back in. Makes for a wonderfully creamy, more soupy consistency. I think you could add just about any veggie to this easy base recipe for a yummy hearty stew...very flexible. Will definitely make again.

Tofu Lasagna

With a few extras, this was fantastic! I took several other reviewers' advice and was very glad I did: used a full jar of sauce, make sure the tofu is dried and doubled the cheese. We also added a few of our favorite veggies: mushrooms, cauliflower, onions, zucchini as well as some Italian seasoning and red peppers. I think you could use whatever you wanted. I added these raw to the mix and with a little extra cooking time, it came out great! Will definitely be making again.

Vegetarian Korma

I substituted evaporated milk 1:1 for the heavy cream and it worked well. I also added 1/2 a cauliflower b/c we had it laying around and that also worked . As other reviewers mentioned, my potatoes needed more time to cook - next time I'll add them at the beginning with the onion. Will definitely make again!

Persian Sabzi Polo (Herb Rice with Fava Beans)

first time cooking with favas and we loved this! i used only 2 cups long grain brown rice in 4 cups of water at the start. then a little less herbs for the lesser volume. otherwise followed the recipe and it turned out great. we liked the proportions of favas to rice we got. also took another reviewer's advice and saved some herbs to add fresh at the end. will definitely make again. thank you!

Creamy Black Bean Dip

i have no idea how this is possibly creamy. i followed it exactly and it was way to sweet and totally chunky and dry. i added olive oil, chopped onions and garlic, lemon juice and water to try to save it. it's edible but i will not make this again.
