Apricot Leather

I haven't pulled this out of the oven yet but I thought the idea was so good I should comment. I did change it a but... I followed the sans-sugar, banana instead suggestion and blended everything before putting it on the stove for 5 minutes. (I have this thing against blenderizing scalding hot items...) I'm sure this will turn out wonderful! Thanks again!

Vegan Corn Muffins

These were really yummy. I didn't have egg replacement (nor did I know what it was...) so I used 1 1/2tbsp corn starch instead. I also added 3/4cup of frozen corn for moisture and I also added 1/2 tsp of paprika to the dry ingredients. They turned out wonderful!

Taco Seasoning I

After committing to making tacos with this recipe, I realized I didn't have chili powder so I substituted 1 tbsp chili sauce instead. I added 2 tbsp water and mixed everything together. It smelled and tasted AWESOME! Yummy... won't be buying the packaged stuff again that's for sure!

Crustless Cheese Quiche

Sooooo good... and easy! I added about a tsp of baking powder as suggested. I also put ham and mushrooms and used parmesan cheese instead. Yummy... Next time I will reduce the amount of butter/margarine probably to 1/3c or even 1/4c. It was a little bit greasy. Didn't effect the flavour though... Will definitely make it again... especially for my mom, she will be SO Surprised!

Adrienne's Cucumber Salad

This recipe is really yummy. I changed it a little though. I don't like raw onions so I added the onions to the boiling sauce and let sit for a couple minutes to partially cook the onions to get rid of the bitterness. I also used apple cider vinegar instead of regular. Very yummy - will use for many more dinners.
