Broccoli Rice Casserole

This seemed much cheesier than the Casserole I was used to eating. Everyone said it was fantastc. I followed directions exactly and used some leftover jasmine rice I happened to have in the fridge.

Old-Fashioned Scalloped Corn

Made this for Christmas and it just didn't do it for us. I thought it was incredibly bland. Maybe it was the brand of creamed corn I used. Will not make again.

Giblet Gravy I

I made as stated using less chicken broth and more of the turkey drippings, nice flavor, I ended up using 3 times as much cornstarch to get it to thicken properly. The only change I would make in the future is to use less chicken broth and more turkey drippings since it seemed to have more of a chicken flavor to it.

Pumpkin Gingerbread

I have NEVER liked Pumpkin Bread. Made this recipe to give as thank you gifts. I sampled it just to make sure it wasn't too dry, flavors right, etc. HOLY COW, THIS WAS FANTASTIC! It was hard to give these away, I will definitely be making another batch and will make for years to come! Thanks, this changed my perspective on Pumpkin! My oven runs a little hot so I kicked my temp down to 325 and since I was making mini loaves, (as someone else suggested) I cooked these for 45 min and they did make 7 minis. If you do make minis, Make sure you rotate front to back half way through cooking.

Meatball Nirvana

These were awesome with a kick! Made as the recipe stated. After they were done in the oven, I drained and added them to spaghetti sauce which I simmered for about an hour. A little spicy for my kids, but they'll adapt!

Baked Spaghetti

This was a real family pleaser. I made this as stated but used 3 cups of cottage cheese so I wouldn't have a cup left in the contatiner. I may add mushrooms and bell peppers next time I make it and a little more salt but it was really good without and it easily fed a family of 7 with plenty of leftovers.

Cheesy Confetti Rice

This has been in my box for 10 years, wish I had made it sooner, that would have been an extra 10 years of enjoyment. This was easy to make and very enjoyable. I left out the pimento and scooped out my serving before adding the olives. (I'm not a fan) Compliments from all! The green chilies add such a nice flavor, I wouldn't have guessed they were in there if I hadn't made it.

Fry Bread Tacos II

This fry bread was really good. Reminded me of the Indian Tacos I used to get at the fair. I doubled the dough and it made enough for 7 of us with 3 left over. Very filling, just doped it up like our regular tacos.

Make-Ahead Sandwiches

We made and ate these tonight. I actually served them on homemade hamburger buns. Worked for us. Bundled the leftovers and will freeze those. I may add fresh garlic next time and some cayenne for added kick. We used dill pickles and my husband really enjoyed this variety.

Sichuan Beef with Rice Stick Noodles

This is the first time I have used rice stick noodles and we really enjoyed them. My husband loved the dish and I have promised to make it again. I did not have chili puree so I used hot pepper flakes as a quick sub. It gave it some nice heat and next time I'll be sure to find the right stuff. I will definitely double my quantities also. I have to feed a family of 6 and this was a stretch. We just cooked the whole package of noodles and stretched the rest.

Baked Macaroni and Cheese I

Best Mac and Cheese recipe that I've made to date. I did saute garlic and onion in the bacon fat and added 1/4 tsp dry mustard to the roux. The rest stayed the same.
