Chicken Pot Pie IX

Reviewed: Jan. 2, 2010
I've also made this with turkey instead of chicken, and once with beef. The beef version was essentially a beef stew in the pastry crust - I had always assumed pot pies were too difficult to attempt but this is a great recipe and was a huge hit at my house.

Chocolate Chocolate Chip Cookies I

Reviewed: Jan. 2, 2010
Made these with half semi-sweet chips and half Hershey's Mini Kisses milk chocolate chips - beyond decadent. Make sure you've got a glass of milk ready!

Chinese Cabbage Salad I

Reviewed: May 13, 2008
I am completely addicted to this salad. I've made it about 5 times now, with only a couple changes. The recipes doesn't tell you to include the soup mix flavor packet in the dressing, but I do. I think it adds a little something extra. (I've used both the chicken flavor and the Oriental flavor and both are yummy.) Cashews were out of my budget the first time I made it, so I using unsalted peanuts instead. I didn't toast them but they were great in the salad, so I've stuck with them. I've been making it to eat for my lunches over a period of several days. I put the cabbage mix, nuts and green onions together in a big container but have found that it works best to keep the dressing in a jar and add it to each portion as I serve it. Also, I keep the toasted noodles in a Ziploc bag in the cupboard and add them just before I eat. This way nothing gets soggy. Awesome salad! I've got noodles toasting in the oven for my next batch!

Clone of a Cinnabon

Reviewed: Mar. 10, 2008
These hardly need another glowing review but wanted to pass on that, since there are only two of us (and one of us is on a diet.. ahem!), I halved the recipe and it worked wonderfully. I'd never made cinnamon buns before - always assumed it'd be difficult - but these were really easy and turned out perfectly. Might make the full recipe next time and try to freeze half after they're rolled but before they rise. The only change I made was to use a simple vanilla/icing sugar glaze instead of the cream cheese icing, as Hubby doesn't like cream cheese.

Pizza Dough III

Reviewed: Mar. 9, 2008
This is the one!! I've been searching for a pizza dough recipe that makes a nice, thinner crust, not too doughy, not too bread-like, and this one (finally!)fits the bill. I used my bread machine and a large pizza pan with holes in the bottom. I didn't have to pre-cook it at all and followed the quantities in the recipe exactly. It was perfect! Thanks!

Best White Icing Ever

Reviewed: Feb. 14, 2008
I only had a dozen cupcakes to ice and so halved the recipe. It's awesome! Made more than enough.. oh darn.. just going to have to eat the rest on its own! :) Thanks for a great recipe. (I used 1/2 shortening and 1/2 butter, btw)
