Tilapia Soft Tacos with Chipotle Cream

I love this recipe but I have never made it with tilapia! I always use the small (50-60 count) shrimp. So delicious and so easy. I guess I'll have to try it with the tilapia someday...

Spicy Basil Chicken

Spicy and delicious...I used carribean hot peppers and it had a really nice, spicy flavor and was easy to prepare...did I mention it was spicy?!? Since my boyfriend and I like to set our mouths on fire at least 3 times a week, this one is a definite keeper!

Parmesan Puffs

These tasted really good. Since the recipe said it was for 8 rolls, that's how I measured it out. I think that next time I will make them smaller so that they cook more evenly. Very tasty though!

Modenese Pork Chops

Delicious! And very easy...definitely use the fresh rosemary. Your chops will brown up more if you cook them in olive oil instead of butter but add a little butter back in for the sauce...

Baked Snapper with Citrus and Ginger

I thought this was OK but if I make it again, I will drizzle it with a little fat; olive oil, sesame oil...just a little something to make it a little more satisfying. Loved the soy sauce flavor, though!

Chicken and Pasta in a Mango Cream Sauce

Sorry but I thought this was fairly bland, even after I spiced it up with cardamom and jalepeno and used coconut milk instead of cream. Maybe I've destroyed my taste buds with too many spicy curries lately! Thanks for the recipe though...

Authentic Bahamian Peas and Rice

Never having been to the Bahamas I cannot vouch for the "authenticity" but I thought this was a pretty good recipe. It looked gorgeous while cooking! I was making this as a companion to jerk pork, but needed to also satisfy my vegetarian friends, so I eliminated all the meat. I also didn't know what browning sauce was so I threw in some soy sauce. It turned out pretty good. I think the bacon probably would have added some body to the flavor but it was still a hit. The coconut milk is a must! Thanks for a good recipe.

Thai Pineapple Chicken Curry

Not as spicy as I would have liked it to be but a good base recipe for me to experiment with. I didn't have any trouble with the sauce thickness by using only 1 can of coconut milk and really boiling it for the full time stated in the recipe.

Lentil Quiche

Didn't like it, sorry...I thought the lentils broke up the texture of the quiche too much. I like mine much firmer. Tasted okay but won't make it again.

Spaghetti Torte

Beautiful presentation but I wasn't crazy about the lack of flavor. Both of us thought it was missing something. I added garlic (of course) but even after that it didn't have much zing. I really loved the looks of this dish though so I'm going to continue to tweak it and see if I can get the flavor up to it's potential! Thanks for the starting point.

Delicious! The flavor was absolutley perfect. However, I found that once it was cut it collapsed and didn't look as pretty. No one complained about the looks though because their mouths were full! I might use a little less of the cream filling next time to see if it stands up longer. Thanks.

Wow did this smelled delicious while I was making it! I used it to make chicken souvlaki pitas and it was the perfect combination of flavors for the job. Highly recommended for anyone craving Greek food.
