Pineapple Upside Down Cupcakes

I am a scatch baker as well, but we all need a short cut now and then. Made these for Easter today, along with a turkey, ham, ETC. Made 3 desserts and this one came out of the oven just in time to be served warm! Can you say Yummy!!! And pretty :) Thank you.

Beef Stroganoff II

Recipe is quick and easy. I am a caterer, work really late sometimes and cannot think about dinner, go figure. LOL. I always use this website to help me jumpstart my brain. I used left over sirloin roast that we had cooked a few days ago, already seasoned so i only added 1/4 tsp salt, no pepper. But added Crimini mushrooms! And you might want to add about a half a can of water when adding soup, too thick, without. Awesome!!!

Oven-Roasted Turkey Breast

Very good! Made this for a Pre Holiday fix, now that the time of year is here. And I was looking for something to go with the Squash Gratin I had made (Kabocha snd Butternut) Perfect together! only four stars because I cooked to instructed time and temp and it could have been cooked a little longer for tenderness purposes.

Excellent recipe. Gave it 4 stars cause I added quartered mushrooms with the artichokes. Sprinkled red onion and red bell pepper over top with cheese. Very Good!!

Grilled Tequila-Lime Shrimp

Absolutely wonderful marinade! I Used the this recipe and added 1/4 teaspoon ground black peppercorns, 1/4 teaspoon red pepper flakes, 1/2 teaspoon cummin, DOUBLE the tequila (4 TBLS) and LEAVE the Shell on the Shrimp!! It holds the marinade in. BBQ shrimp till pink in color, do not over cook or will be rubbery and tough. My husband and I are caterers, Love this recipe :)

Rosemary Roasted Turkey

Okay, best turkey we have ever had/done! Husband Brined the turkey in salt water and a bit of sugar for about 36 hrs. Then followed the recipe, adding garlic cloves, onions, and rosemary sprigs to the cavity of the bird. Moist with so much flavor!! Love the Rosemary!

Slow Cooker Guisado Verde

This is a very good recipe. I have made it 2 times and changed the following both times to make sure it was consistently wonderful. I used Boneless Pork Roasts(2 pack at my local store), inexpensive, lean and less waste. I used 1 1/2 to 2 pounds of Fresh Tomatillos, roasted on my bbq till soft and marked well. Used Vegetable Broth instead of water and Mexican Oregano. Other ingredients the same as recipe. I place pork on bottom of Slow Cooker, Everything else on top of pork. After cooking on high for 7 hrs in slow cooker, remove pork. Strain tomatillos, peppers, etc. Save the broth. Blend to make a beautiful Verde sauce, add broth to achieve the desired sauce consistency. Put pork back in broth to keep warm and moist till serving. I serve with roasted red or yellow potatoes. Can freeze leftover pork and sauce. I use leftover pork, reheated with some of the Verde sauce and broth and shred it to make Fried rolled taco's. It's all good!!
