Delicious Ham and Potato Soup

Delicious! I like to boil a ham bone and use the ham broth for the base instead of water. No additional salt is necessary. Perfect soup on a cold day!

Stuffed Peppers My Way

These were fantastic! My brother's vegetarian girlfriend loved them even more - took the leftovers home to eat cold for lunch the next day! I only used the red, yellow and orange peppers - beautiful on the serving plate. I also reduced the roasting time as suggested - they came out perfect!

Six Can Chicken Tortilla Soup

Delicious! I must be a wimp on the heat meter because this was spicy enough for me. I did as others suggested (but doubled the recipe): replaced 1/2 the chicken broth for cream of chicken soup; used a rotisserie chicken; and topped it off with sour cream, mexican cheese, and crushed tortilla chips. Will definitely be added to my list of favorite soups. Thanks!

Easy Southwestern Tortilla Pie

My husband and I both enjoyed this...not so my 14 yo son...oh well no accounting for taste. However I did modify the recipe to lower the fat: using part-skim ricotta and 2% mozzarella. Next time I'll try substituting the light cream for ½ and ½ cream. I think the additional salsa to pour over the wedges counters any "strong" spinach taste. Great meatless meal!

Spaetzle I

This was my first time ever eating Spaetzle never mind making it! I followed the advice of a previous poster and added some nutmeg. They were very tasty...even my picky 8 yr. old daughter liked them. However, it took forever to push them thru a colander. I need to find an easier way! They were perfect with Wendy's Hungarian Goulash. :)

Mexican Cream Cheese Rollups

These were very well recieved at the meeting I brought them to. I will definitely make them again! I followed the recipe exactly..."6 green onions"...usually means 6 bulbs with their tops which could have 4 or 5 green "fronds" on each bulb. If you go by that...there is more than enough to spread on 8 tortillas.

Irish Ginger Snaps

These are nothing like the store bought ginger snaps...hard and thin, which I don't like at all. These were delicious. Thick, with a crackled top. 5-6 minutes definitely would not be enough...at 9-10 minutes, they were perfect. My family loved them!!

Irresistible Irish Soda Bread

This bread was very easy to make. The flavor of the bread does taste even better the next day, as suggested. I would also use a bigger pan than the 9 x 5 (overflow problem!)...I should have heeded this advice. But it was delicious!
