Herbed Scalloped Potatoes and Onions
Great alternative to cheesy potatoes, which I'm not fond of. To cut down the cooking time, I parboiled the potatoes and sautéed the onions in a little butter; they only needed 30 minutes in the oven that way. I only used three potatoes since there were just two of us, but didn't reduce the sauce. They were amazing. I normally eat one portion of food, but went back until they were all gone…three times! They do have a bit of a sweet taste, especially if you keep going back for more. In the future I think I will replace the mayo with sour cream and see how that turns out.

Delicious Ham and Potato Soup
The flavor was good. I didn't add salt since there was so much bouillon plus ham which has enough salt for me, but I did add some carrots. It was too thin for my taste, I could tell it was going to be very thin before I added the roux so I kept checking the recipe to make sure I didn't make a mistake! I ended up removing about 2 cups of broth (doubled recipe) before I added the roux. Even then it was a too thin for me. If I make it again, I will remove almost all broth, add the roux, then add the broth back in to get my desired thickness.

Shredded Chicken Tacos
Fantastic! I made the meat for tostadas which turned out great. I browned boneless skinless chicken breasts, then threw everything into a crockpot. As soon as the chicken was tender enough, I shredded it then returned it to the crockpot. I think slow cooking the shredded chicken all day helped blend all of the ingredients making it very flavorful.
