Spicy Lentil Dip

Be sure to RINSE the lentils first. I have a blue bazillion pounds of red lentils, and am always looking for ways to use them up. This was wonderful! Even the kidlets enjoyed it. Also delicious as a spread.

Pumpkin Waffles with Apple-Cranberry Relish

This is a review of the waffles only, as I did not make the relish. Fabulous! Wonderful flavor, easy to make, very good texture. I made these for company, and they were very well received. What a nice breakfast for autumn! Next time I will serve with some sautéed apples.

Peanut Butter Fudge IV

Fabulous! Fudge this easy shouldn't taste this good. I'm submitting some to the county fair. I like it with half crunchy and half creamy pb. UPDATE: I won a blue ribbon for this fudge!

Almost Stuffed Peppers

We enjoyed this with peppers from our garden. It's a very forgiving recipe - salsa works, pasta sauce works, canned tomatoes work...basically whatever you have on hand. I used cooked brown rice, because that's what we eat. Tasted great!

Sloppy Joe Sandwiches

I scaled this recipe to 64 servings to feed a crowd for a church cookout. I left out the water, and it was perfect! Kept it warm in a counter top roaster. Lots left over, but it freezes great!

Brown Sugar Oatmeal Pancakes

I've tried other Oatmeal Pancake recipes from this site, and this is the best I've tried. Quick, easy, tasty. I didn't have buttermilk, so I just used regular milk and it was perfect. Thanks!

Best Spanish Rice

Once I used brown rice, and literally added THREE more cups of (boiling) water as the cooking progressed. Also, the brown rice takes about 80 minutes on my stove. Just fyi, in case anyone else wants to make it with brown rice. I've made this recipe "as is" with white rice, and the flavor is phenomenal!!! Last night, I used white rice and instead of chicken broth, I used this tomato/chicken bullion from the Hispanic food aisle. Outrageously good!!

Spinach Brownies

I use a 16oz bag of frozen spinach, and just barley thaw it in the microwave. Easy, tasty, forgiving recipe. Tastes great with anything thrown in, too!

Slow Cooker Sausage with Sauce

Incredibly easy and delicious! I made it with sweet sausage, because it was for a group. For us, I'll make it with hot sausage - yum! I also doubled the amount of sausage, so I upped the cooking time to 8hrs. It was perfect!!

Hasselback Potatoes

I thought these were very good. I used extra butter, because it just didn't "seem" like enough. The only trouble I ran into was that mine didn't "fan out" at all. You pretty much couldn't tell they were sliced until you cut into them. But TASTY!!

No Roll Pie Crust II

Excellent. I left out the sugar, because I was using the crust for a pot pie. At the same time, I also made the other No Roll Pie Crust recipe on this site...this one is definitely superior to that one. I have even made this substituting olive oil for half the oil (again for a savory dish, not a dessert pie) and it was delicious!!

Cinnamon Swirl Bread

Company worthy!! We didn't let it sit overnight. I pulled it out of the oven before we left for church, and we gobbled it up as soon as we got home. I would add a tsp of vanilla next time.
