Easy Meatloaf

A perfect basic recipe. Jazz it up however you want. The texture is just perfect, and the glaze on top is wonderful. We prefer the glaze at least doubled, but that's a preference thing.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Batter was completely runny. I ended up having to add a copious amount of flour, otherwise we'd have had crepes for breakfast. The flavor wasn't great. Lots better pancake recipes on the site.

I fully expected this to be gross, but it was SO good. Instead of tortillas, I topped the chicken with broken tortilla chips, sliced black olives, and cheddar cheese just at the very end until the cheese was melted. I also used chicken thighs instead of breasts, so I cooked them at 350 for an hour, covered with foil until the end when I added the cheese etc. YUM! The sauce, thinned, would make a great base for tortilla soup, too.

Baked Apricot Chicken

This was very tasty. It has an almost Asian flavor to it, which could easily be played up with a little soy sauce and some creativity. Yummy served with rice and sugar snap peas!

Spinach Enchiladas Verde

I liked it fine, but the rest of the family hated it. Also, the corn tortillas completely fell apart. I had thought this might be a good recipe for guests, but it seems that the appeal is far from universal.

Chicken Salad Spread

A good starting point. From here, you can get creative - try dried cranberries, or curry powder, or some other affectation. There are so many ways to dress up chicken salad, but it starts with the right ratio of chicken to mayo. I enjoy substituting ranch dressing for part of the mayo. Yum!

Honey Grilled Chicken

I triple the recipe to have extra sauce (we like it over our rice, etc.) We serve it as-is for the children, and then add a little chipotle for the grown ups. YUM!

Ribboned Fudge Cake

My mother requested this for her birthday. I made this for her about three YEARS ago, and it made such an impression she wants it again! This cake is really delicious. I think a lot depends on what brand of mix you buy...I find DHines gives the best results. The cream cheese is easiest to beat after it has come to room temp. If you don't have time for that, soften it briefly in the microwave to make mixing it much easier.

Adrienne's Cucumber Salad

This is quite good! I did decrease the sugar. A local place makes this, and it's wildly popular. They use red onions to make it prettier, which I will try next time. I tried adding fresh dill, but I'll leave it out next time. A great side dish! My daughter said it tastes like summer!

Bill's Sausage Gravy

We prefer the hot spicy sausage, but use whatever sausage is your preference. I love cooking this for my family - it's down home comfort food! My friend's husband is very jealous that MY husband gets homemade sausage gravy...should I tell my friend (his wife) how easy it is? Hmm...nah!

Judy's Strawberry Pretzel Salad

This is the classic pretzel salad recipe, seemingly most common in Western Pennsylvania, Ohio, and that area of the country. There it is often served as a side dish (in fact, in college it was usually on the salad bar). Now we live in the South, and this is a largely unknown dish. When taken to pot lucks here, it is usually treated as a dessert. Excellent recipe! Just the right proportions of everything! Authentic pretzel salad - thanks, Judy!

Barbequed Marinated Flank Steak

We love this. When flank steaks go on sale for less than a couple dollars a pound, we stock up. I freeze each one in a freezer bag with about four times the marinade. We grill it when it defrosts, and the meat is SO tender and tasty. I also make extra marinade to drizzle over our potatoes and onions, and we mop it up with bread. Yum!!

Awesome Grilled Cheese Sandwiches

My favorite way to have grilled cheese now! I don't use butter at all, just spritz each side with some Pam - which makes this a much healthier version. The sandwiches come out nice and crispy/crunchy, not mushy and greasy like the traditional ones.

Really not good. Waaaay too much oil, too much pepper, not enough sweetness. I will try another recipe, because I like the concept of the salad - just not the dressing from this recipe.

Sesame Broccoli

I really wanted to like this recipe. It smelled great cooking (gotta love that sesame oil), but the resulting taste of the dish was lackluster. We both found it very bland, and in fact I could not finish my portion.
