Lemon Cupcake with Blackberry Buttercream

This is just a review of the cupcakes, not the frosting, as I had a strawberry lemonade frosting I wanted to use on them. I followed the advice of the original recipe submitter, and made these as mini muffins. It made far more than 24. Eventually I broke down and used most of the remaining batter for six full sized cupcakes. I think perhaps the recipe calls for too much butter. My cupcakes are greasy. The lemon flavor is *extremely* subtle, despite my fears that I used too much zest. I was hoping for more lemon kick.

French Toast Bake

The taste was pretty good, but the temperature was WAY too high, at least for our oven. I made two pans. I flipped the soggy bread bits in one, and left them alone in the other. They came out exactly the same, except the non-flipped one was prettier (it's hard to neatly flip soggy bread bits).

Mandarin Orange Breakfast Bites

These are tasty, but there's just not much orange flavor. I even tried subbing orange juice for the milk, and adding orange zest. Not sure what else could be done to make these "orangier"!

Whole Wheat, Oatmeal, and Banana Pancakes

The kids liked these. 11yo said the taste and texture were good, but they needed a lot of syrup to keep from being dry. The toddler ate 3 big pancakes, but he's like a goat - he'll eat pretty much everything, lol.

Mildred's Sour Cream Pound Cake

My 11yo made this to go with some strawberries we picked up. It was SO GOOD! Wonderful texture, great flavor! This is now our stand-by pound cake recipe.

Ground Beef Wellington

With extra seasoning added to the beef to un-bland it, this was really good! My family liked it, even the picky littles. I don't think I'll make it too often, as all those crescent rolls get expensive when you have to scale the recipe to a large family, but it was tasty enough to serve to guests. Among other things, I added Penzy's Prime Rib Rub to the beef, which gave it a great flavor.

Cha Cha's White Chicken Chili

Used a 7oz can of green chiles, and left out the jalapenos and cayenne (because I was feeding several children). I pureed one of the cans of beans. FABULOUS! Very tasty!

Yeast Pancakes

We really didn't like these. The flavor was not yeasty in a pleasant way at all. With enough syrup, the children ate most of them, but there were some left untouched which I had to feed to the chickens. That never happens with pancakes around here, and I've occasionally made some hockey pucks, lol.

Sunday Morning Lemon Poppy Seed Pancakes

I double the recipe, except the baking powder/soda. They cook up delicate and fluffy, and absolutely delicious. I like to use the powdered lemon peel from penzys, mixed in with the dry ingredients. Lovely flavor! Tastes great paired with seedless raspberry jam.

Oaty Cereal Bars

The taste was good, but it was too skimpy an amount for a 9x13 pan. I've had these before, and they were always thick, maybe an inch thick. Some other recipes scale the amount to 10 cups of cereal for a pan! I like the idea, but I'll try a recipe with lots more cereal next time.

Cheddar-Thyme Flaky Biscuits

Instead of thyme, I put in ranch seasoning, and replaced part of the milk with ranch dressing. OH WOW. So tasty. The texture of these biscuits is quite good. They are light and fluffy, not heavy hard hockey pucks! Definitely making again!

Barbecue Beef Cups

This is such a great recipe for pot lucks. We have lunch with a large group from church every Sunday, and these are a hit. I've been making them for several years now, and have tried a few different types of biscuits - all of them have turned out well!

Oatmeal Waffles

Wonderful! Also great subbing wheat flour for part of it. We've also tried adding blueberries or chocolate chips, and it's just great! I love that these waffles stay crisp - other recipes seem to get soggy a couple minutes after they're out of the waffle iron, but these stay nice!

Breakfast Pizza

Really good! I had a pre-made pizza crust which was 16 inches, so I used 5 eggs. I didn't have any hash browns on hand, so I grated a couple potatoes. This recipe is very versatile. I've made it bacon and onions, and I also enjoy the flavor of adding some powdered mustard to the eggs. My husband loved it!
