Cheesy Scalloped Potatoes with Ham

This was so good. I didn't have time for it all to cook, so I pre-cooked the sliced potatoes in the microwave for 6-8 minutes. I upped the spices a tiny bit. We agreed, it was the best scalloped potatoes I've ever made.

Focaccia Bread

This was fabulous. I didn't proof my yeast, and I just let the kitchen aid abuse it for a few minutes instead of kneading it. I doubled the spices except the thyme, and I sprinkled a little salt on top. This was so good, my family of seven devoured it in no time!

Merrick's PBJ n' Banana Burritos

It was SO yummy. When I made it, I added in raisins and used grape jelly instead of apricot jelly. My younger siblings LOVED it, even though I used whole wheat tortillas.

Spicy Lentil Dip

Be sure to RINSE the lentils first. I have a blue bazillion pounds of red lentils, and am always looking for ways to use them up. This was wonderful! Even the kidlets enjoyed it. Also delicious as a spread.

Biscuits with Blue Cheese Butter

Delicious and decadent! The whole family loved it, right down to the toddler. I need to have company over soon, just so I can make this again! It looks impressive, but was SO easy! I think I did have to cook it for closer to 20 minutes.

Alisha's Scalloped Potatoes and Ham

The boiling time is too long as written. I boiled mine for 15 minutes, and it was too long. Next time I will boil them for 10 minutes. I subbed ranch dressing for part of the milk, and it gave it a lovely flavor. My family gobbled this up. Next time I will probably make two pans for the seven of us, and enjoy the leftovers for lunch the next day!

Vegetarian Korma

Loved this. Flavorful, healthy, delicious. Subbed coconut milk (light), left out the jalapenos for the sake of the kids, and used ground ginger instead of fresh (it's what I had). The cashews and cilantro totally make it!

Best Ever Muffins

Baked Oatmeal II

I make this at least once a week for our family. What I love MOST about it is that the recipe is forgiving enough for lots of variation. Sometimes I sub applesauce for the oil. Sometimes I sub a couple bananas for 2/3 of the milk. Sometimes I sub pumpkin puree for most of the milk, and add some pumpkin pie spice. Once, I had ground up too many gingersnaps for the crust of a pumpkin cheesecake, and threw the excess gingersnap crumbs in. Delicious! You can even add peanut butter (and bananas?...or chocolate chips?) to the recipe. To add more healthy goodness, try adding some ground flax seed or wheat germ. It's yummy enough that the kids would never guess! Great recipe on its own, and fun to experiment with, too!

Italian Bread Bowls

I save and freeze the bread that I hollow out from the centers, and use it to make breakfast casseroles. That way, there's no waste! These bowls are delicious, and come together easily. A nice way to dress-up soup!

Quick and Easy Oatmeal Muffins

This took about four minutes to throw together, and I baked them for 16 minutes at 375. They were delicious! The kids devoured them. I look forward to trying it with some healthier modifications.

Strawberry Soup I

Delicious! 3 of my 4 children loved it. I think the other one was thrown off by the strawberry seeds - what can you do? It reminded The Husband and me of a chilled fruit soup we had on a cruise once. Delightful! (I also left the water out, per the other reviews.)

Delicious Sweet and Buttery Bananas

I used 3 bananas and 1/3 cup brown sugar. It was DELICIOUS on our waffles this morning! I think with a touch of rum, it would be yummy on ice cream for adults - sort of a bananas foster type topping.
