Simple Spinach Lasagna
This turned out great! I made my own sauce by simmering roma tomatoes and a few tablespoons of water and then adding fresh basil-thin sauce but strong fresh tomato flavor that went great with all the spinach. I stuck with the recipe and used cottage cheese and it was really good, no need to switch to ricotta for me. I will definitely make this on a regular basis.

Mexican Casserole
This was so easy and delicious! I did add garlic and cumin along with the chili powder, and sauted some mushrooms and a red bell pepper to add some fresh veggies to this. I sauted the veggies seperately and added in with the meat when I added the beans, tomoatoes, and cream of mushroom soup. Thanks for a fast and easy dinner! Oh, I also substituted ground turkey for the beef and it was great!

Mexican Style Shredded Pork
This is one of the best things I have ever made! Mine only took 4 hours on low, beware of the timing, for a 3 pound roast. I seasoned with cumin and minced garlic before putting in the crock pot and added a dried chipotle pepper, delicious! I served it over brown rice that I seasoned with cumin, garlic and a can of black beans, and lime juice. Thanks for the great recipe!
