Thai-Inspired Confetti Salad

DELISH! I made this to use up some ingredients I had on hand, so my expectations weren't that high. Wow, was I thrilled with the results. I used mango and pineapple instead of papaya, had cashews instead of peanuts, and didn't have fish sauce so I upped the soy sauce slightly. With the changes, still a winner. I served over Jasmine rice-yum! My husband is always skeptical when I make these healthy, unique, ethnic dishes, and offers some constructive criticism. But this one left him speechless--he LOVED it. I will be making this again soon. Thanks for sharing!!

Mushroom Chicken Piccata

This recipe is definitely a keeper! I reduced the amount of chicken to three breasts (because its what I had), but didn't modify the sauce portion. It turned out perfect. We served over jasmine rice (cooked with half water, half the rest of the can of broth) and there was a perfect amount of sauce. Delicious!

Hot and Spicy Tofu

Great first-time tofu recipe. I consider myself a wuss when it comes to spicy dishes, so I cut back on the pepper flakes. Next time I'm going to use the full tsp. I'll also add honey next time like other raters suggested. Delicious served over brown rice. Definitely sharing this recipe with my vegetarian brother.

Eggplant Parmesan

Be sure to slice the eggplant thin enough or you'll only have enough to do one layer instead of two. I really enjoy the taste of this dish, but mine came out a bit a mushy. Next time I'll follow the advice of another reviewer and salt the eggplant a little, and maybe the tomatoes so its not as juicy. I will make this again!

Nutty Granola II

Fantastic granola recipe! I may never go back to the boxed stuff. This recipe is great as is and as a base for getting creative. I added flaxseed and swapped dried cranberries for the regular raisins. I can't wait to try this again with molasses...

Creamy Potato Leek Soup II

This recipe is super easy and yields tasty and flavorful results. I was on the couch slurping it within 45 minutes. The potatoes I had on hand were a mix of gold Yukon and purple Yukon. The purple potatoes made the soup look funny in color, but the sneaky anti-oxidants make up for it. Like other raters, I subbed milk for cream to cut back on the fat. I will make this again and again.

Monster Cookies V

I slashed the quantity of this recipe significantly from 132 servings to ~22. (My hubby and I don't need that many cookies!) It still turned out magnificently! This recipe is definitely a keeper.

Festive Turkey Meatballs

Delish! I took another user's suggestion and swapped the honey for a can pineapple chunks WITH natural juice, 1 tsp of orange marmalade, and 1 tsp honey. I only had plain old yellow mustard on hand and it subbed for dijon just fine. I had to thicken up the sauce with a little cornstarch, which worked great. The pineapple chunks and meatballs were great together. I will definitely make these again!

Pasta e Olio

I used chopped cloves of garlic to flavor the oil and took them out before dumping the oil over the pasta. My fiance liked the kick from the crushed red pepper. Great as a side dish or a late dinner, in our case. :) Will definitely use it again.

Mid-Summer Italian Bread Salad

Delicious!! We added fresh mozzarella cheese balls and didn't have the fresh thyme, but it was great. I'll definitely make this again and try some of the other users suggestions.

Went great with the BBQ Chicken I made, chicken on the middle of the grill and potatoes in the indirect heat. Super easy and quick with great results. This recipe is a keeper!

Mango Gazpacho

This recipe is definitely a keeper, great for a light summer meal. Even the picky palates of my fiance and my roommate enjoyed this recipe. I served it with crusty french bread and Riesling. Yum!

Blueberry, Banana, and Peanut Butter Smoothie

I didn't have flax seed and I used frozen strawberries and raspberries instead of blueberries because they're what I had on hand. The peanut butter flavor was certainly dominant, but you could still taste the fruit. I'd make this recipe again.

Amazingly Easy Irish Soda Bread

Delicious! I added a 1/2 cup of golden raisins, and the bread was a big hit when I had people over. They liked it better than a store bought version we had earlier.

Ranch-Style Party Dip

Bob's Mexican Stuffed Chicken

Delish!! I didn't have mushrooms and I used half fajita mix and half taco mix (it's what I had) and it still turned out wonderfully. The chili powder added the perfect little kick.

I'm eating this now, right out of the oven! It's delicious, perfectly sweet, and moist. I followed the suggestions of another poster and used 1 cup oil, 1 cup sugar and 1 cup of applesauce.
