About this Cook
I'm disabled and live with my husband and grown son. I have fibromyalgia.
My favorite things to cook
I like the quick and easy stuff...since I can't do a whole lot these days. My son has chronic pancreatitis so I try to find recipes that won't aggravate his condition.
My favorite family cooking traditions
My mom wasn't such a great cook, but there are a few treasured recipes that she handed down, such as a dynamite recipe for oatmeal cookies.
My cooking triumphs
Never thout about it much. I'm good at making large spaghetti dinners for the extended family, and I think they really like my spagetti sauce. I get compliments on it all the time. Nowadays, any day I am able to cook is a triumph for me.
My cooking tragedies
When I was in home ec in high school, we had to make German Chocolate Cake using a recipe that contained vinegar. I assumed my partner would measure the vinegar (one tablespoon), so I just went to the front and poured about half a cup into a container. Unbeknownst to me, she used the entire thing. We had to eat whatever we cooked, and that cake was really disgusting with all that vinegar. To this day I can't eat German Chocolate Cake.

Awesome and Easy Creamy Corn Casserole
I always make this just as directed, using only the ingredients stated. This is a great recipe, easy and delicious. My extended family always demands this for any dinner we have, and they always say it's the best ever. I do not understand how people can say things like, "You have to really like corn to like this." Are you kidding me? IT'S A CORN CASSEROLE.

Herb Biscuits
This is pretty good. I just made it for the first time, but I used garlic and onion powder. The thing I would do different is that I would pour the extra butter mixture over the bicuits AFTER they come out of the oven so the flavor might get further into the bread. Of course, that may make it too soggy...

Rempel Family Meatloaf
Made this just as written. I had an old favorite meat loaf recipe that my family loved, but tried this just for the change. Oh, my goodness! Who knew meatloaf could be so different? My hubby LOVED it and said, "No offence, the old recipe was great, but this is the best I've ever had." Thanks so much.
