About this Cook
I currently live on the beautiful Central Coast of NSW, Australia and work as an Assistant Editor. I come from a family of amazing cooks, my parents actually ran restaurants while i was growing up, which fueled my love of cooking and prompted me to become a qualified Chef, but due to a back injury i no longer work in the industry. However, the dinner parties and especially cakes are always a treat.
My favorite things to cook
Cakes and deserts, i love to watch people's faces when they taste something so mouthwatering for the first time that literally takes their breathe away - for me that makes it all worthwhile. Dinner parties are always great as well, sitting down with the family - we'll cook anything from roasts with all the trimmings to an asian stirfry to Seafood and salad, living in Australia we have such an abundance of fresh fruit and vegetables it's almost a sin not to make the most of it.
My favorite family cooking traditions
Every Sunday we have a cooked breakfast/ brunch which brings us all together once a week to catch up, which usually last well after lunch. There are all sorts of traditions with a big family and ways of keeping everyone in touch... my favourite is Christmas, we spend two to three days preparing food - it's a lot of work, but Christmas is worth it.
My cooking triumphs
Nothing really comes to mind, i've been cooking since i remember, so i'm sure there has been many... My famous fudge cake might be one - i made it once at Easter and had 10 orders for more. =))
My cooking tragedies
I don't really think there has been any major tragedies - other than when i was younger, i actually thought the topping for a crumble was made with breadcrumbs because of the texture and proceed to top a pan full of prepared apples and rhubarb with breadcrumbs... suffice to say, that wasn't too good... a good laugh though.

Heavenly White Cake
Wow! Wow! Wow! This cake is gorgeous, its so light and fluffy, it practically melts in your mouth. I had to make a spare cake just so i would have enough to serve with hungry little fingers constantly pinching a taste here and there lol. The only thing i would recommend is make sure you cream the butter and sugar for long enough - around 5 mins, the lighter the butter and sugar the lighter the cake will be. I also used castor sugar and found the texture to be marginally smoother... overall, this is a gorgeous cake.

Pancakes I
These pancakes are just like my mum used to make when i was "little", and gosh that really is saying something. I would highly recommend trying this recipe, you won't be disappointed... one little hint though, and this is true for any pancake recipe is to keep a little extra milk handy, if the mixture starts to thicken up while you are cooking, just add a little more milk and whisk through and you'll have light, fluffy and mouthwatering pancakes throughout the whole batch. Enjoy!

Banana Banana Bread
Sorry, for a recipe with over 2,000 reviews i was very disappointed. I used 7 small-medium sized banana's and i still couldn't taste the "banana" flavour, the texture was nothing like a bread and the end product was nothing like what a "banana bread" should be. In my opinion, keep looking.
