About this Cook
My favorite things to cook
I like trying new recipes, and experiementing with new ideas.
My favorite family cooking traditions
Holiday cooking is one of my favorite cooking traditions, I still do the turkey the way my dad taught me, I have made a few variations, but pretty much stay to the way it was when my mom and dad were still around. Also the summertime BBQs. My husband does the BBQing, and I do the inside cooking & prep, just like when I was a kid.
My cooking triumphs
My dad always used to do the holiday turkeys. He was a long haul truck driver, and one Thanksgiving, he couldn't get back home in time for Thanksgiving, so it fell to me to make the holiday meal. My dad left specific instructions just in case. I'm proud to say that it turned out almost as good as his. The only mistake was when he had 1 stalk of celery, I thought he meant one piece. Other than that it was perfect!
My cooking tragedies
I haven't really had any cooking tragedies yet, I've had a few 'boo-boos', but nothing that couldn't be salvaged.

White Cheese Chicken Lasagna
This was very good...I made it today, I used chicken breast which I baked earlier with a little salt, pepper, and a bit of lemon juice, it was very moist, and the broth it made was very good, so I used that broth for my sauce...I also used fresh spinach, which I threw in with my onions & garlic when they were almost done....hubby even threw in some chopped cilantro coz we didn't have fresh parsley...I also used cottage cheese instead of ricotta coz that's all I had on hand, but I added an egg, parmesan cheese and a bit of the cilantro in....the sauce was soooo rich & creamy, very decadent, hubby loved it, in fact he was dipping a few pieces of chicken in the sauce as I was putting it together...I am SOOO glad Ifound & tried this recipe instead of some of the others on the site, it took a bit longer, but I didn't want an alfredo sauce w/either cream of chicken or mushroom soup...very rich & fattening, but very good, and worth all the effort...we served it w/a nice salad and garlic bread...will be making again for special occasions...

Chicken Cordon Bleu I
I made this last night, it was the first time I ever made this and it turned out great!!! Not a bite left. Everyone loved it. It was so easy and so good!! I of course checked out the reviews before trying, and got some good suggestions. After pounding chicken, I dipped chicken in egg wash, put bread crumbs on a plate and laid chicken on top, then put cheese and ham on top, and simply rolled it up. No hassle and not much mess. I forgot to get toothpicks, so just put on baking sheet seam side down, and they didn't unroll. I put swiss cheese on top last 5 mins of baking, and while cooling, made a cream sauce with cream of chicken soup about 1 cup of sour cream, I didn't have any lemon juice, so I seasoned with a bit of lemon pepper seasoning. We served with brown rice, and steamed broccoli...Yum!!! Great success!!!
