Chicken Pot Pie IX

excellent chicken pot pie. I boil the chicken and vegetables in the broth and milk, then strain the liquid into the gravy mixture. i also add 1 tsp poultry seasoning.

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

this was very good, but it seemed like it needed something, I think I didnt pack the basil leaves down enough when I was measuring it, so it wasnt quit pesto-y enough, also definately needs a bunch of salt, but very delishes overall, I will make it again.

Pasta e Fagioli I

WOW, this was amazingly good and easy. I used 2 cans cannellini beans insted of one, fresh tomatoes and basil from my garden, and some zucchini which would have otherwise gone bad. It was delicious. Next time I'll try it with spinach instead of zucchini.

Baked Rice and Vegetables in Broth

this was ok. i used all brown rice and did it on the stove top, so i followed the istructions on the package of the rice for how long to cook it, and i added the veggies (which i doubled) half way through. next time i'll try it with chicken broth instead of veggie broth, and i'll add even more onion.

Key West Chicken

Love this. the only change i make is doubling everything in the marinade except the soy sauce, so the soy is not so overpowering, and it makes a bit more marinade. Marinading overnight is a must.

Cream Cheese Frosting

this is my favorite cream cheese frosting. I also do a mild chocolate variation by adding 3 Tbsp unsweetened cocoa powder in with the powdered sugar. I use it on chocolate zucchini cake, and its delicious

T's Sweet Potato Fries

Me and my son love sweet potato fries, I make them at least twice a month. I don't pre-cook them in the microwave though, they just need to be cut evenly and cook in oven for 40 minutes, turning AT LEAST once. I prefer to omit the lemon peper and use paprika and garlic powder instead. Dont even attempt to make these crispy, sweet potato fries will never crisp (unless fried), they just burn instead. Its because of the natural sugars. They should be ever so slightly golden on the outside and soft on the inside. Thats how you'll know when there done.
