About this Cook
I'm not wrapped as tightly as I should be. Have a look at www.richardchristensen.com. It's cheap enterainment...
My favorite things to cook
Chili and seafood dishes. But not mixed together. That would be disgusting.
My favorite family cooking traditions
My wife makes an incredible oyster dressing for Thanksgiving/Christmas. After 33 years, she STILL won't give me the recipe!
My cooking triumphs
Salmon. If my family had their way, salmon would be on the menu every day.
My cooking tragedies
Anything that the dogs won't eat or sets off the smoke detectors.

Cabbage and Kielbasa
Rather than draining the can of potatoes, we used that for the 1/2 cup water. We also added sun dried tomatoes, including the olive oil. Worked out great. Great recipe!

Mississippi Mud Pie II
We didn't even make this right and it was still fabulous! We used a 9" graham cracker crust from the pantry. Without the chocolate pudding, we threw banana and lemon pudding together. If you're looking for something high in calories and low in food value, this is IT!

Chicken Jambalaya I
If you've got lots of stuff and little time, this recipe is for you! I didn't have bell peppers, so I used baby carrots. I didn't have a 14.5 oz. can of tomatoes, but I did have two gargantuan tomatoes from the garden. Threw it all together. Cooked one cubed chicken breast in Chef Prudhomme's cajun spices (just a pinch) and, I kid you not, this was ready in under 30 minutes! Do yourself a favor! Double the servings and enjoy!
