Florns' Chinese Steamed Fish

Reviewed: Feb. 7, 2009
Great base recipe! I substituted things for what I had on hand (ground ginger instead of fresh, crimini mushrooms, and ~1/2 tsp. of fresh chili paste instead of the diced red chili). I also used more like 2Tbs of soy sauce istead of 1, and threw in juice of 1/2 lime. Huge hit! I chopped mushrooms and spread them out in a 9x13 pan with cauliflower florets (just to add more veggies) and lay the snapper over the top of them. Topped seasoned fish with diced tomato, and poured soy/sesame oil/lime juice/chili paste mixture over the top. 400 for 15 minutes. Sprinkled with the cilantro after. Delicious! Best white fish recipe!

Broccoli in Roast Chicken Drippings

Reviewed: Jan. 20, 2009
What a clever idea! I bet this would be great with asparagus, too, or any other veggie that could roast quickly. The only thing was the timing ... the amount of time is takes for these to cook is dependent on how hot your oven is, how firm/soft you like your broccoli, and how small you cut up your florets. Mine were ~ two-bites-each sized florets, in the oven for about 12 minutes at 400 and they came out cooked and just slightly crisp. Gotta love having one less pan to wash. Brilliant!

Beer Butt Chicken

Reviewed: Jan. 20, 2009
I roasted mine in the oven 350 for almost 2 hours (no grill). I also used my own seasonings and only 1/2 stick of melted butter = plenty! Rubbed the melted butter and herbs all over chicken and under skin. I used half an apple to plug up the neck opening to hold in aromatic steam (I'm sure an onion or 1/2 lemon would be fine also). Pulling the legs to the front helped to stabilize/support the squatting chicken. I pammed the outside of the beer can but it was still pretty tricky coaxing it out of the cooked chicken. I like the idea of using a 16 oz beer can to make it easier to pull out after -- maybe I'll try that next. The chicken itself was good but not above what I would expect for a good roasted chicken. The drippings, however, made for the most flavorful and complex gravy I've ever made -- wow! And chicken always smells good in the oven but this one definitely had us counting minutes until dinner. Delicious! Thank you!

Oh-So-Good Chicken

Reviewed: Jan. 21, 2009
Ohhhh, man. So good. When I went to use the salsa I found that my husband had eaten a bunch of it, so I only had ~ 1/2 cup! I added 1/2 tomato sauce and a few dashes hot sauce to make up for it, but I still didn't have 16 oz. I also added a can of black beans for more protein and fiber. My kids loved it!
