Mango Muffins

Awesome! Delicious - just made them tonight - used spelt flour, halved the amount of sugar, and it was still plenty sweet - halved the fat too - replaced other half with applesauce.. still moist sweet and delicious! The mango chunks are just GREAT in this muffin. Thanks for the recipe! :)

Carrot Cake III

Great recipe! As I tend to do, I used HALF the fat and substitute other half with applesauce, also I used HALF the sugar and it is still plenty sweet.. no icing necessary! :) Made it a few times now, family loves it, thanks!

Almond Butter Cookies

These are excellent - I also tried a version where I added carob powder and pressed pieces of dates into the cookies instead of almonds - turned out delicious!! My kids ate them up FAST. Thanks for a great recipe :)

Good Old Fashioned Pancakes

Just made these for breakfast this morning - perfect classic pancake recipe, and so easy! Everything turned out splendidly; I usually make a healthier version with whole wheat flour, wheat germ, applesauce and almond milk - but it's nice to go back to the good old-fashioned tried-and-true classics every once in a while... Definitely a keeper!

Fluffy Pancakes with Wheat Germ and Applesauce

I made them this morning and both my 2 yr old and 7 yr old loved them - the whole batch is gone between the three of us!! I had only 2 whole eggs in the fridge and a package of liquid egg whites to account for the rest, but even with an egg yolk missing they turned out well. I also substituted cow milk with Almond Milk (unsweetened) and had to add a bit extra. Next time, I'll add a pinch of salt - these would be great with shredded apples and cinnamon, or bananas as well!. Thanks for a great breakfast! :)

Peanut Butter Banana Muffins

these were ok - unique taste, but a little too much on the bland side... also, the second day they got really mushy. I probably won't make again, since no one really cared for them too much... unlike the chocolate chip banana muffins I made the same day :)

Best Brownies

I made these a couple of times before the summer, but am just reviewing now, as I'm thinking of making them again.. ;)) turned out really well each time, def. the best brownies I've ever made! (though I've only tried 2 other recipes) Would prefer if the recipe didn't call for so much butter and icing sugar - but hey, I guess that's where the flavour and texture comes from :) cheers ;)

Banana Banana Bread

I screwed up and threw my wet ingredients directly into a bowl containing an entire bunch of mashed overripe bananas, without measuring the 2 1/3 cup... Came out reeeeally tasty and moist, though a little too dense and sweet for my taste (on account of extra bananas I'm sure...) The only *other* adjustment I made was to use sucanat (unrefined pure cane sugar) instead of plain brown sugar. yummy!! :) update: after using HALF the sugar and HALF the butter and substituting the other half of butter with apple sauce - the sweetness is near perfect and the bread is still nice and moist.. I've now made it with spelt flour as well and used walnuts or almonds depending on what's in the pantry - delish!!

Chocolate Chip Banana Muffins

I bought a couple of bunches of overripe organic bananas on sale yesterday, and planned to make a bunch of different banana delights... These muffins were absolutely delicious, and by far the best out of all the treats I made. Definitely a desert muffin, which was fine by me! My 6 yr old son, husband, and mother all loved them... My adjustments included using sucanat (unrefined pure cane sugar) instead of white sugar, and extra virgin olive oil instead of sunflower seed oil. I followed all the measurements to a tee - was concerned about the generous amount of oil - but used it anyway... They came out moist and packed with flavour! Next time I would like to see what happens if I decrease the amount of oil and add almond milk, applesauce, or an extra egg to compensate... Also, I would like to try spelt and/or whole wheat flour, and decreasing the amount of chocolate chips. Making them a little more nutritious and lower in fat would mean I could eat more, riiiiiight? ;-P tee hee...
