About this Cook
I've been married to my wonderful husband for 8 years. We have 3 children, ages 5, 3, and 1. We live in Las Vegas (yep, people actually live here), but lived in Texas for 5 years. We moved to Vegas to start a church, and it's been going great! We have family in town, but we're always meeting new people. Having folks over for a big home-cooked meal is a great way to have fun and get to know one another.
My favorite things to cook
While living in TX, we ate ALOT of Mexican/Tex-mex food and now we can't live without it! I also love to cook Mediterranean-style meals. Anything that is grilled/broiled with lots of lime and cilantro will be a favorite of mine.
My favorite family cooking traditions
My mom and I would always bake pies Thanksgiving morning while watching the Macy's parade on tv... Even though she lives far away, I still do this and now I've been letting my daughter help.
My cooking triumphs
I made the best apple pie in the whole world, last year. Maybe it was just a fluke, but it seriously was the best I'd ever had!
My cooking tragedies
I got this recipe for chicken fajitas from an authentic Mexican cookbook. I followed the recipe exactly, but somehow they turned out sooooo nasty. My husband ate them anyway, pretending to like them, but I refused. I was so mad, they seriously took way longer than the quick kind, where you just add fajita seasoning. Never again. (I'm still a little bitter)

Rosemary Ranch Chicken Kabobs
We've made these several times now, and they are a hit with the whole family! Wonderful flavor, even if there isn't time to let them sit and marinate. I usually make a little extra marinade so that it covers the chicken completely, and I prefer a little extra worchestershire and rosemary (fresh is a MUST!). No matter how much chicken I make, everyone gobbles it up and there are no leftovers!

Marinated Grilled Shrimp
This is the BEST shrimp marinade! If you are in a hurry and don't want to have to let it sit for a half hour, or bother starting up the grill, these are great broiled. I just mix the shrimp with the marinade, throw it on a foil covered cookie sheet (or broiler pan), and put it under the flame for a few minutes on each side. I like to broil it until the shrimp gets slightly blackened on the edges. My husband likes his spicy, so I add some Cajun's Choice creole seasoning or Tabasco sauce to his. Yum!

Spinach Roll-Ups
These were really good! Took them to a get-together and had several people comment on how tasty they were and ask for the recipe. I highly recommend using cream cheese in place of some of the mayo or sour cream. I also used green onion which seems to go really well in these type of roll-up appetizers. I'll definitely be making these again. Thanks!
