Beef and Irish Stout Stew

Love this stew! Served it over mashed potatoes like some others suggested. I put a little horseradish in the potatoes and it was fabulous! Will definitely make again and again :) Thank you want2hike!

Best-Ever Texas Caviar

I made this to take to a Daytona 500 party and everyone raved about it. It did make a lot but I'm okay with that. I have been taking leftovers to work and putting it on my salad at lunch time. Fabulous!

Delish! I make this the day before and put it in the fridge then let it bake while we open our presents on Christmas morning. Also great when you have overnight guests :)

Pesto Chicken

Very Good! I used bacon instead of prosciutto but would definitely use the prosciutto next time. The bacon didn't quite get crispy enough - ended up taking it off but the chicken tasted delicious!

Easy Mexican Casserole

OMG - love this recipe! Very versitile. You don't need to use the exact ingredients for it to be delicious. I healthified it by using soft corn tortillas instead of tortilla chip, ground turkey instead of beef, plain greek yogurt instead of sour cream and low fat cheese. I added another layer of corn tortillas before putting the cheese on. I will make this recipe again and again. The whole family loved it!

Banana Streusel Muffins

I like to healithfy (is that a word?) things so I made these with 1/2 white and 1/2 whole wheat flour. I also substituted plain greek yoghurt for the sour cream. I made mini muffins to take to a picnic and everyone loved them. They didn't even know they were eating something healthy. :)

Grilled Pork Chops with Fresh Nectarine Salsa

This salsa is delicious! I used pork terderloins which we like to grill with montreal steak seasoning. So instead of putting the rub on the pork I added about 1/2 teaspon of cumin right to the salsa. Sooo good!

Mango Guacamole

I made this for a St. Patrick's Day party (I thought the green would be nice) and it was a huge hit! The recipe says it serves 8 but the party I took it took was attended by approximately 20 people and I brought 1/2 home. Of course there were other snacks and I didn't mind bringing it home at all. None of it went to waste. I will definitely make this again and again.
