Tasty Tuna Burgers

Excellent! Much better than I had expected. I only got 3 burgers out of this. Would be great as appetizers, as well (think of these as an alternative to crab cakes)

Crustless Spinach Quiche

My perfect idea of breakfast: (1) Easy to eat healthy breakfast in hand, running out the door; (2) Pretty enough to serve for brunch. Delicious! I bake in muffin tins (without papers), sometimes with a tomato slice on top to make it look good. Hubby loves them and is in awe of how I can make spinach taste good, ha ha.

Decadent Sugar-Free, Fat-Free Chocolate Pots De Creme!!

These are amazing as truffles! I tried a pot after it set up in the freezer (about 2 hrs), I thought it was too hard. So I forgot about it and after sitting on the desk overnight, I tried it again (nothing like chocolate when you first wake up!) and thought the consistency is exactly like these diet-busting truffles I used to make. So here's what you do: Chill the recipe as written, then let it come to room temperature (leave the house or go to bed to make this step easier). Roll 2 tsp. of chocolate into a ball, then roll in some cocoa powder (or finely chopped nuts). You would never know they're diet-friendly, they're so good! Thank you, Wicked Creations, for sharing this simple and amazingly delicious recipe!

Very good. Like other reviewers, some of the caramel stayed in the pan, but there was more than enough that poured over the flan, so no complaints here.

Heavenly Angel Food Cake

Hands down, best angel food cake EVER! Just amazing on its own, but with sliced strawberries and a drizzle of homemade chocolate sauce, woah baby! Always turns out beautiful, even before I bought an angel food cake pan and instead, was crazy enough to use a Bundt pan coated with cooking spray.

Whole-Wheat Chocolate Chip Cookies

Perfect right out of the oven--slight crunch on outside and soft inside. Whole wheat flour gives these a delicious complexity without tasting like health food. Substituted nuts for dried cherries. I will definitely make these again.

Very good! I substituted crab for lobster, added about 1/8 tsp. cayenne pepper, omitted the sherry, and substituted heavy cream for whole milk to reduce the fat content a little.

Death by Chocolate Mousse

AMAZING! Instead of the Oreo crust, I took my favorite chocolate cake recipe, divided it into thirds, and baked in a 9-in round pan, which I cooled and put in the bottom of the springform pan. My guests couldn't have eaten more than 1/12 of the cake/mousse.

Brown Sugar Meatloaf

As is, the recipe is just ok. With the following additions, it's pretty good: 2 slices cheap bread in bottom of pan to absorb fat; 2 cloves garlic, minced; 1 tsp. cumin; dash cayenne pepper. As other cooks, I mixed the brown sugar and ketchup and used it as a glaze.

Bow Ties with Sausage, Tomatoes and Cream

Very good! I substituted grilled chicken for the sausage as preference. I didn't want to go to the store, so I also substituted evaporated milk (liquid kind) for the cream and diced, fresh tomatoes for canned (sauteed with onion and garlic, after onion caramelized). Added juice from 1/2 lemon because it tasted too creamy. It went very well with my homemade whole wheat pasta.

Fabulous Homemade Bread

YUM! I love the subtle texture the oatmeal gives. I substituted honey for brown sugar as another reviewer suggested. I also substituted four cups of bread flour for whole wheat flour (6 cups total whole wheat flour), and added another packet of yeast because it didn't look like three would be enough. I mixed and kneaded by hand--kneading took about 12 min. My loaves were done in 30 minutes, baking as many as would fit on one full oven rack at a time. As another reviewer suggested, I froze some loaves in oiled ziplock bags after the first rise and shaping them, then will thaw later, allow to rise, and bake. It's a good thing I froze some, so we don't eat it all tonight!

Taco Lasagna

Wow! My hubby and I both devoured this. Substituted shredded chicken for ground beef (although the beef sounds good, too) and flour tortillas for corn. Added sauteed red bell pepper, drained and smashed black beans, and some corn. We were very happy to have leftovers.

Garlic Chicken

Very good. Chicken was flavorful and moist, but I think the coating could use some spices. I served it over Caesar salad and we really liked it, as the Caesar dressing compensated for the lack of spices.

Easy Microwave Chocolate Cake

Pretty good! I'm a big baker, so I wasn't expecting a microwave cake to be so moist. I followed others' reviews and used 3/4 cups sugar and 3 Tbsp. cocoa, but I think I'll reduce the sugar to 1/2 cup next time. Nice quick treat that doesn't heat up the house!
